This brings be back. My great grandmother grew up in Alabama without refrigeration. My favorite besides fermented veddies has to have been her premade meals in a jar😊. They were her equivalent of a tv dinner, they had meat, veggies and startch.Just grab a jar from the root cellar, throw in hot water for 30 minutes, grab bread and butter and a pint of whole milk and you are ready to rock😊. Once per year in early fall she would have me help her make what seemed like hundreds of jars. It took in total a whole weekend but was well worth it

@@debraeichner7784 but if you watch ..she added vinegar 9% to everything...that is an acid. I would say there was about 1 tbsp vinegar to each jar which looked to be about 1 quart and she also added salt. So the acid level has to be pretty high.
I am watching from Canada. My parent's and their families were from Hungary and Germany. They told me about all the tyoes of canned foods they preserved during the war, prior to them immigrating to Canada. Interesting videos.
Definitely can them. If they stay dried, they often get bugs. Or attract animals. Or place dried beans in cans and keep them safe. If you can find a vacuum machine for cans that can save you so much food. Greetings

I am watching from Los Angeles. My wife is from north-east Hungary. In the village where she grew up, people did a lot of canning of vegetables they grew in the garden. I remember seeing lots of cans of lecso. There is a funny story about a famous Hungarian opera singer named Bab Laves, but it only works if you speak Hungarian and English. It works because Bob in English is a nickname for Robert and is pronounced the same way as Hungarians would say "Bean". After WW2 in Hungary, when the currency collapsed and there was nothing in the stores in the city, if you didn't have relatives in the villages, you went hungry. Villagers had a long tradition of canning food they grew in the Spring and Summer, It kept them full in the cold winters, and they were able to eat vegetables when they were no longer in season. In the US during the depression in the 1930s, my father grew up near his grandmother's farm. He would help out doing chores on the weekends and during the summer. They would can turnips, make tomato and berry preserves and can and store them in their root cellar. My father told me he grew up on black-eyed peas and cornbread.
@rickmorrow993 I see, thank you, I thought it was just a type of bread. When you said, "grow cornbread," you meat an еnd-product. In childhood, we did not have sweet corn but only others ones. I guess it was field or dent corn. So, this why 😀 I don't like sweet corn it is too sweet to me and too soft 😀. I think I can find field and dent corn somewhere in the farmer's fields only.

These are dried beans. They can last as well dry for a long time, but cooked and prepared like this is whole meal you don't have to cook. Dried beans need a couple of hours to be ready anyway. I cook sometimes beans and freeze them, but canned save space in the pantry. Greetings

Many people do both and the Mormon community has been very helpful to teach others. Canning usually only last for a year. Dried food last for 25.

I was told 3 years in even temperature, cool, dark pantry. Some 5 years BUT NEVER BEANS,( told had something to do with acid level of food??)

@@debraeichner7784 but if you watch ..she added vinegar 9% to everything...that is an acid. I would say there was about 1 tbsp vinegar to each jar which looked to be about 1 quart and she also added salt. So the acid level has to be pretty high.

Definitely can them. If they stay dried, they often get bugs. Or attract animals. Or place dried beans in cans and keep them safe. If you can find a vacuum machine for cans that can save you so much food. Greetings

I am watching from Los Angeles. My wife is from north-east Hungary. In the village where she grew up, people did a lot of canning of vegetables they grew in the garden. I remember seeing lots of cans of lecso. There is a funny story about a famous Hungarian opera singer named Bab Laves, but it only works if you speak Hungarian and English. It works because Bob in English is a nickname for Robert and is pronounced the same way as Hungarians would say "Bean".
After WW2 in Hungary, when the currency collapsed and there was nothing in the stores in the city, if you didn't have relatives in the villages, you went hungry. Villagers had a long tradition of canning food they grew in the Spring and Summer, It kept them full in the cold winters, and they were able to eat vegetables when they were no longer in season.
In the US during the depression in the 1930s, my father grew up near his grandmother's farm. He would help out doing chores on the weekends and during the summer. They would can turnips, make tomato and berry preserves and can and store them in their root cellar. My father told me he grew up on black-eyed peas and cornbread.

@maxt240 you grow corn, dry the corn kernels and grind it into cornmeal. It is usually made from field or dent corn, not from sweet corn.
@rickmorrow993 I see, thank you, I thought it was just a type of bread. When you said, "grow cornbread," you meat an еnd-product.
In childhood, we did not have sweet corn but only others ones. I guess it was field or dent corn. So, this why 😀
I don't like sweet corn it is too sweet to me and too soft 😀.
I think I can find field and dent corn somewhere in the farmer's fields only.

No exterior praticamente nao existe panelas de pressao. Por isso o dela demorou 3 horas. Eu coloco os vidros com feijao, fechados, dentro da panela pressao e fica durante 45 minutos

Easy simple methods of preserving food without all the headache of modern U.S.D.A. restrictions and methods, using wayer bath methods, no need for the dreaded,(in my opinion) pressure canners. Saludos! Ella lava primero los frascos con agua y jabón . Luego los pone en una bandeja para hornear y los deja a la temperatura más baja del horno por 30 minutos. Esteriliza las tapas y lo demás en agua hirviendo ( pinzas o agarraderas , embudo y tapas)

Yes! I wondered about those jars and lids too, here in the U.S. since this type of water bath method is frowned upon here although it has been commonly used for generations around the world.

These are dried beans. They can last as well dry for a long time, but cooked and prepared like this is whole meal you don't have to cook. Dried beans need a couple of hours to be ready anyway. I cook sometimes beans and freeze them, but canned save space in the pantry. Greetings

-leaving proper space at the top of the jar
-allowing jars to cool slowly
-sterilizing before using jars
-always using new lids
-wiping jar tops before placing lids
-adding 9% vinegar solution to keep pH low
...These are all steps she has included to prevent food-borne growth of botulism
