You sure can. Anything with water content will give you gravy. You can also add a little bit extra water during the cooking process to help thicken it up.

Oops, Chris I'm a woman to begin. It is a catastrophe Chris, because you've cooked the dish the wrong way round. Didn't you see the texture of aubergine turned black, also potatoes look under cooked. Also, too much liquid still in the dish. Thank you.

I never get it when people say "wrong way" . The beauty about cooking is cooking the way you like and enjoy, at the end of the day I have to eat it. 2. Texture? Black? You did account for the skin right? 3. Potatoes were fully cooked, I can assure you of that as I ate it immediately after. Do you cook with Yukon Gold potatoes.. they don;t take long too cook. And as far as liquid is concerned, I did mention one can personalize the dish by cooking off. I use a stainless steel pan with a heavy core, which retains a lot of heat. So after the stove goes off, it continues cooking. I guess what I'm getting at is.. my recipe will never be like yours or anyone one elses. So rather than criticize, we can say.. :"it's different than mine".
