After binge watching your videos, I finally went to the store and bought some 'dines. I got the ones in this video and ate them with chopsticks (naturally). I've never had any canned fish before, but it basically smelled and tasted like what I imagined canned tuna tastes like. It was pretty good, but way drier than what I was expecting. Not sure if I just got a bum can, or if that's just what they're like. I felt like they'd be better on some toasted rye bread, imho. I will try a few brands to see what I like. Either way, I'm happy to add a new food into the mix. Thanks for the inspiration!
I've been on the dine scene for awhile now and, copying Matthew, I went with Snow Peak chopsticks. Purple. I've loved them since day one and can't see needing anything else. Having said that, if a great company like Fishwife wants to market a tool to their customers, I would buy something that would help me open tins easier. It seems like their tins, and lots and lots of high-end European canneries use really thick steel, or another metal, and often wrestling the lid off without cutting yourself, snapping the tab off or spilling oil everywhere is difficult. I'm new to this neck of the river, so I tried the Fishwife smoked trout. It wasn't too bad, but it wasn't tightly packed, so the amount was small per tin. And you have to buy 3 tins at $10 each! plus another $9 shipping. I liked them but I think I'll go back to buying smoked trout in the grocery store.

Video is great but I truly think you are over thinking the tongs thing. Just hold them like tongs, squeezing with thumb and index finger. In a plating setting youd probably use a smaller tong like chopsticks but when cooking you use them like tongs.
