    Hey everyone. T&T BBQ, thank you for the Carolina Sauce video. I have been making it since I was about 12 or 13 yrs old. My father was an amazing Pit Master. He won many different awards and catered across the Carolinas, Georgia, Kentucky and Tennessee. This is the basis for Eastern Carolina Sauce. You can Build your own distinct flavor profile from there. the Carolinas are the home for BBQ. This is how we have always done it. You have represented it well. Keep the smoke coming bruh.

    I'm from Eastern North Carolina. You're on the right track but instead of water ans so much brown sugar we use apple juice instead of water to cut the apple cider vinegar . The natural sugar in the apple juice let's you cut down the amount of brown sugar. Also if you want a more appealing color you can add just a little bit of ketchup. But thats always a big argument here in the Carolinas . I use just a little amount not really enough to change the flavor or consistency. Good job though 👏 👍

    just made this only thing i did different was use my dry rub instead of straight salt. I cant imagine it being any better tomorrow but i cant wait. best sauce ive had in awhile.

    Thank you very much for this one! I have a bad habit of not liking and commenting on TH-cam videos I watch but man I just had to on this one.
    I’ve used this on probably 5 separate cooks now and this will be my go to for pork! I’ve adjusted it slightly for liking (less brown sugar, a little extra vinegar, add MSG, extra black pepper and chili flakes), but this was also fantastic as is. I just prefer a little less sweet and more heat.
    The comments I’ve received on my pulled pork have all been very positive and I prefer mine, using this sauce, over any I have found from the BBQ restaurants around me in Central Texas.

    Excellent tutorial. I love the “Carolina” style bbq sauces. The vinegar is more “versatile” than the mustard but they’re both great. Try the vinegar on some collards, it’s amazing man.

    Iam in NORTH CAROLINA and it's a sauce with many tweaks ,it's good with pork and chicken..maybe even froot loops cereal ....I've been eating it my whole life

    I'm from Carolina north Fayetteville,in bad news now 39 yrs, cooked 41 yrs I add to the same bbq sauce recipe just one cup of water, 1tblsp granulated garlic,1tbls onion powder, add salt as needed I use kosher only for this round box salt for soaking cleaning chicken,fish, deer shoulder going on smoker today haven't been to bed see Eastern Carolina north you need to taste the vinegar & red pepper/ garlic/ salt add little smoked paprika if you want to. or liq smoke I'm gonna do both

      Just made the sauce, let it sit for 24-hrs and served to the family...I think the wife's tongue done beat the hell out of her brain wanting more!!! This sauce is sweet on the front with a mild heat on the backside (I used Hungarian paprika)....

      patricia Brooks You should get yourself an electric pressure cooker. You can make a ton of different recipes (including bbq), and it doesn't take up a lot of space and it doesn't heat up the kitchen. And it's fast. I love it.

      You need to get yourself a sous vide cooker. Finish that pork butt off in the oven after you added a little look e bbq rub and serve using this sauce.

      Just a FYI you will not find a definitive recipe for this BBQ sauce. The apple cider vinegar, salt and red pepper flakea stay the same. Some people claim that's all it is but from my experience every place tweaks and most pit masters lie about what they did, I know my uncle did that frequently. Got to keep the family secrets, right?

      Of course real eastern n.c. BBQ is made from whole hogs . Western n.c. BBQ is made with shoulders

    For SC I make a similar sauce but if u really want a good taste mix it up and simmer while stirring aft3 it cools store for for a couple of weeks it has a more mellow taste I have keep some for 2 years sealed up and it's better with age

      BTW T, you mention texting on the phone. I found an App called Speech to Text. It works for messaging but haven't tried it on TH-cam comments as I use my desktop PC. Good luck.

    I saw another video using sugar. Real Eastern NC bbq sauce would never use a sweetener, but I make it like this sometimes because my wife likes it sweeter. Would love to taste your creations, unfortunately I'm stuck in Germany.
