    The dry brine with salt gave that pork such a deep red color, and the finished product from the smoke ring to the bark was fantastic Mike! Well done my friend!

    I like using the vinegar based sauces. That is the holy grail around S.C. and N.C. Your PP turned out nice cooked on the SNS Kamado. Nice video Mike. Do you use an ash tool to rake out the ashes thru the lower vent cavity?

      Sorry, Phil. Just saw this. I always take it apart and vacuum it out. I just prefer to make sure it’s totally free from ash. The ash took does work though. I’m just OCD 😂.

    A vinegar sauce is my favorite pulled pork condiment. Runner up is a mustard sauce.

    I need some advice. I have people coming over on Sunday around 3pm for a late lunch. How would you time this? Would you start the night before? I have a 5lb shoulder to cook.

      I would definitely start it the night before. Better to be done early and have time to rest it than to be pushing to meet the deadline. Shoulders are so stubborn in the stall sometimes. Get it done early and rest it in foil at safe temp above 160 (you can use your oven). Good luck 👍🏼

      Texas 2.5 BBQ just wanted to keep everything warm. This is a thin sauce so pouring it on cool would cool off the pork too much for me. Wanted everything to be nice and hot 👍🏼. Thanks very much for watching 🙏

    Just found you , great Vid. I make the N. Carolina sauce omitting the catsup. Like mine spicy , make spicy and wimpy for others. Have 5 grills , smokers. Not bragging just a hobby for this 84 year old great grandpa. Smoking 2 butts this weekend for friends. My great grandparents came from Fairbluff and Whiteville way back. Really enjoy watching folks like y'all keeping Southern foods on the table. Nothing like smoked meats, cat head biscuits to sop gravy. 🐻

    In my finishing sauce, I like to use some of the same seasoning I used for the rub. It helps to incorporate the flavors throughout all the meat.

    Is this Meathead’s Lexington Dip? I love that sauce. It really cuts the fat and sweetness of the pork for a great balance of flavors in the same way coleslaw does. Awesome cook bro

      Bill Siebel thanks very much, Bill! I love them all so much. The Pit Barrel is an outstanding rib cooker, but the Kettle and Kamado w/SnS really give a person the ability to cook anything, and produce outstanding flavor as well. I don’t think I could pick just one lol.

      Dave M lol it’s in my fridge! I absolutely LOVE that stuff 👍🏼. When I was a kid, I lived in NC for a couple years. My step Dad introduced me to it and I loved it. I order it online and have it shipped to me a couple times a year. It’s really outstanding stuff. For this video, I wanted to do a homemade sauce but I love Scott’s!     Say brother I was born and raised in Eastern North Carolina and you did that pulled pork justice. That is a western NC sauce. We aren't gong to talk about which one is the best because you can easily start a fight......... Great video
