Too little oil. The Maillard will be poor. At least three times the oil was needed for this size of pan-bottom. Note how the spice powders just sat on top waiting to get singed. They ought to have instantly soaked in oil for them to release the aroma molecules. The coconut milk would’ve helped a bit to trap the flavours, but you’d have lost the top notes of all the powders by then. A splash of water flicked by the fingers would have bought you time. Alas!
