No. You wont loose flavor. I do this with lots of citrus fruits. The boiling is to 1) soft the rinds and 2) rid them of the bitterness found in the pith. Boil for 10-15 minutes, then dump the water. process with next part

You just need the sugar to reach the hard crack stage if you want them crunchy. I recommend looking into candy temps! There are free candy temperature charts online

Cook sugar til hard crack stage, then dip lemons in it, voth sides, and take it out. This doesnt appear to be long simmered, and more like blanched lemon slices inside a thin hard candy (lolipop/tanghulu) sugar crust. Hard crack can be achieved/tested with cold water, or temperature using a candy thermometer. Good luck.

And what’s the ratio to sugar and water. I just wish the creator actually gave us instructions because i would of loved to make these at the time because I had SOOO many lemons.
