Also when you boil the whole orange i would give it 4 boils in total it will help reduce end product rhine bitterness. The 675ml water and 500g of sugar seems high but will lead to good result. When making syrup let it boil for a bit getting rid of about 1/2 or little less amount of water. When laying orange slices in you will get a orrange foam. Scoop that out every once and a while and very gently stir all the oranges because its sugar water it will weld and burn fast to your oven if splashed. If it happens get wet cloth or have wet cloth on standby to wipe up quick. This will take 1 full hour of boiling on syrup make sure to watch it closely if you are going to lid it during simmer watch out for extreme foaming and boil over. Right after turn heat off immediately pull orange from syrup and put in strainer then pour all your syrup over it dont let it pool let it strain for about a minute or less. Gently transfer to cookie sheet that has silicon mat or either parchment place in 215f oven depending if your stuck on increments of 5 degrees farenheit you dont have to be exact 225f wont hurt it either. Look up sugar carmelization dont put oven that high. Not everyone cuts super thin unless you get magic mandolin slicer and now correct hand pressure etc. So the larger your slices the more time it will take to dry. Start at 2 1/2 hours feel your oranges should be dry feeling/stiff if they arent keep going and monitor closely. if all your slices are diffrent sizes remove thinnest slices that feel stiff/dry and let large pieces keep going. Note 2. You can do this with 2 cookie sheets at same time in oven if all slices dont fit on one the extra amount of time is negligible. And your done. Does not take 7 days to make this. Just be delicate with your sliced oranges and end product should be just as good.
I have done the recipe (redoing 7 times in total steps 6 and 7, it took me soooooooooooo long to do it each day) and I can say that those orangettes really taste great ! The flesh is my favorite part, it's tender and sweet and the skin of the oranges is not bitter at all. It took me a long time to understand how to properly make step 6 since the syrup wouldn't boil on medium heat even after waiting 20 minutes (maybe I should gave wait a bit longer ?) the first days, so I may have heat them at a temperature too high since the flesh was sometimes, falling a little apart. Update : On a scale from 1 to 9, at 6, the syrup was finally boiling after 15min. But I tried this on a different hotplate so maybe the other one was not heating as much. I did have a hard time cutting them, so the slices are more like 1cm in thickness, but I didn't find them too thick when I bite into them in the end. Whenever the level of water was too low, I just add some water to make sure that every slices was covered. I didn't add any sugar after the first syrup. Since I didn't have an oven, I dried them on a greaseproof paper, and after a whole day, turn each slice over and wait 2 hours before coating them with chocolate. The surface was a bit sticky but not that much so I considered it was okay to coat them. Update : I tried to dry them in the oven and it didn't turn out so well. I let them dry for 2 hours at 120°C and cool down for 3 hours. The surface was still a bit sticky but it was I think, the same stickiness I had when I dried them for a day. Maybe letting more time for the syrup to be cut would have give a better result. I use 50%cacao chocolate and 70%cacao chocolate for the coating, I find that both of them go well with the sugarish taste, so it's up to whatever you prefers in biterness of cacao. Great video and instructions, I definitely like this recipe. :D

No, this is bullshit for masochistic cooks. Hours of work to candy 4 oranges to be dipped in chocolate? Are we sure that this is the only way of candying fruit? I can understand the first blanching, it helps to make the peel lose its intense flavor, but that's enough. But then the method: drain the syrup with only the vanilla in it with a large mesh strainer, then after a minute boil everything again with the vanilla ?! Absurd, pure affectation. And what good would origami on top of the pot do? Simply nothing ... LOL Don't tell me it's "Zen"

I read a few of the comments in the video and all I have to say is this,patience is a golden virtue,my mother makes sweet papaya paste to go with fresh cheese and crackers,it takes her (guestimating) about 1 day and 4 hours to make; she does that to prove that shes infact a good cook,with tons of passion and love put into her work. (I helped her once making the paste and dear me,my hands went numb) she let's the fruit boil over night. Tl:dr cooking is passion and art, respect those who went the through time,devotion. To provide you with such a nice(also great tasting treat).
