    Celsius Instructions for Filet Mignon, 1. add herbs at 37 C. 2. baste until 46-49 C for medium-rare or until 51 C for medium.

Well, after my first ever attempt at cooking a nice steak by following your instructions, I can now say I know.     I just cooked some filets for my wife and I, about 1" thick, for an early Valentines Day lunch, as we will have contractors working in the house tomorrow and followed this recipe with the exception of having the herbs, I was out and not much of a selection in the stores. I have been cooking for over 45 years and this is the absolute best steak I ever cooked, my wife was smiling while she was eating and they teared up, I asked what is wrong and she said I am finished with my steak. This will be my go to from now on. Normally cook ribeyes on the pit, no more. Thanks for sharing your recipe. THE BEST STEAK I HAVE EVER COOKED!!!! I've had steaks at Emirils in New Orleans, paid $70 for a filet and what I just cooked is 20X better

    Nothing like a good pepper grinder along the lines of SGT Gilbert but have a thought for us older folk who must cook with severe arthritis. I took the handle off mine, replaced it with a slice of plastic, and attached a small battery-operated drill to the spindle. Cooking should be fun!

    Just made some prime filets and used this recipe with the rosemary salt seasoning. Holy moley man, this is incredible. Thanks for the tip about taking them off sooner when basting, that’s no lie. Cooked slightly more than expected but they were so friggin delicious. Might get some from the wife tonight.

    Thanks Sonny! How would you deal with a thinner steak like a flatiron that takes about 2 minutes a side? With your fillet, was it fully cooked at your resting point and you’re just reheating / basting when you put it back in at low with the aromatics?
    Also I found that when I used avocado oil for the first time on a steel pan at high heat, it turned to smoke the second it hit the pan! I was expecting it to be a way higher point and similar to canola but it totally blew up my smoke alarms :D

    I went to Costco, got some beef loin and went to work tonight and used your recipe. I am blown away. It's a bit more work-intensive than throwing a piece of meat on the barbie, as you really have to work the pan with the meat. Awesome flavor, juicy, even though it went from rare to medium-well/well in no time. I love to learn from the best. Thank you for posting this recipe. Oh, even though i had the exhaust fan on high the smoke alarms went off, lol.

    This should have far more views. Other than Kenji's reverse sear video, this is one of the top ones I've seen. Also, I LOVE that you PAUSED to get flavor/color in the aromats and butter before continuing the cooking process, vs so many others just toss them into the pan with the steak and press on, which means they add very little.

    I couldn't agree more about burnt onions. They are absolutely delicious ! My favorite thing to have burnt onions with is fried bologna. Fried bologna about 1/2 inch thick, mashed potatoes, creamed corn and burnt onions is one of my favorite meals.

    I consider myself a pretty good cook. Learned lots of stuff during the pandemic but always struggled with cooking steaks indoors on the stove top. Even bought a cast iron and still ruined many steaks. Following this video, I can confirmly say that I just made the best steak of my life. Thanks my man! Didn't even use the cast iron and it came out perfect.

      Don't get too sucked into the cast iron hype. Stainless will also do very well for most steaks. I'd actually argue that cast iron is often too harsh for filet.I'd rather use it for steaks with more mass like ribeye or new york.

      @@dirtyketchup I use a stainless or copper frying pan for my NY Strip, and they come out magnificent each time.

    I've tried your method twice now. (Forgot the the thyme both "thymes"😅)
    But the filets were AMAZING. The resting, basting, flipping and resting again must make all the difference.

    Dude, up until two months ago I struggled to cook a medium/medium rare steak for my gf and I. It was either too rare or overdone.
    Two months ago, I came across this vid.
    Since then, I’ve cooked fillet twice, both times the steaks done to (our) perfection.
    A bit late to the party but, just wanted to say “Thanks”, Dude.

    Was looking for a relatively simple way to cook filet mignon (that doesnt require a grill) since I dont have a go to recipe.
    Just made this tonight and man this made the best, most tender, melt in your mouth steak. So so so good 😩

    Awesome Video. Thanks for sharing. I recently ate a whole tenderloin, also from Costco, because I thought the value was better than their 4 Filet Pack. I took me five dinners because I didn’t want to freeze the tenderloin after opening. I currently don’t want any more filet mignon but not because of your video.

      LOL same thing happened to me, didn't want to freeze the meat and bought a whole tenderloin, Not sure what to do with all the leftover meat. guess freezing will have to do because I don't want to get sick of it. 👍

    Love your videos, if you were cooking multiple filets to feed more people, would that butter and veggies last a second round of basting? Or would it burn if you had to baste multiple steaks? Trying to see how to scale up your recipes when feeding several people

      My guess is probably not. Use a bigger pan or multiple small ones and do them all at once.
