Okay I copied u & mine was a little larger than yours & I wanted it to be quick like yours so I preheated my oven before I started frying & put in 3 mins on 1 side 3mins on other & set out I let cool like u said for 14mins & dug in. Wish I wouldn’t have waited til the end of savor since I like it warm so gratitude for your guidance. I appreciate. :)
Great video, gonna try your advice this evening with a nice bottle of Portuguese red... one question though anyone, after it's cooked if it is left for 10 minutes doesn't it go cold? or is the idea to add some freshly made peppercorn sauce which would add the heat back?
Great tutorial, looks wonderful! All I do different is turn/move with tongs, not a fork. More potential to dry the steak out by “stabbing” it when using a fork as it will bleed juices 👍🏻

As it "rests," the temperature will continue to increase by about 8°c and continue to cook inside because it's sealed. 😊
