Cream Cheese Mints- with yoyomax12

    8 oz cream cheese
    4 1/2 cups powdered sugar
    1 tsp (or more) peppermint extract
    Food colours.
    Beat the cream cheese until smooth.
    Beat in the extract and the powdered sugar.
    At this point you can taste the mixture and add more extract if required.
    Tint the dough whatever colour you want. You can even divide the dough into portions and tint them different colours.
    Pipe the mixture onto a cookie sheet covered with parchment or a silicone mat.
    Make sure you make them small (size of a quarter, not bigger) because they will not dry properly.
    Allow them to dry at room temperature for a couple of hours. Gently turn them over and allow the bottoms to dry for another hour or so.
    Place between layers of waxed paper in a sealed container and store in the refrigerator.
    These can be frozen.

    I meant to tell you that I've enjoyed the new Christmas-y openings. These little mints are so pretty. I think the color you chose..reminds me of Tiffany's. ;)

    I've been looking for a recipe where I can pipe them....I only have a hand mixer do you have any suggestions to make these as pretty of yours, my daughter asked me to make them for my grandsons graduation in May, they have to be perfect....please help if you can...thanks

    That is such a LARGE amount of peppermint extract! Is it watered down in Canada, mixed with something else? Or do they really need that much extract? I've made a mints recipe before, but it called for a few drops of peppermint extract, not a tsp. Wow!

      I guess this brand must be watered down because it isn't very strong at all. Maybe you are using the flavouring oils instead of the extract? Those are much stronger.

      It must be made differently here than where you are. I'm definitely using extract, but just a couple drops is enough to flavor an entire batch of icing. I'll be sure to use less and taste it as I go to make sure I don't use too much. Thank you!
