Cá Kho - Vietnamese Caramelized Fish Recipe

  • Recipe ⬇️ Cá Kho - Vietnamese Caramelized Fish
    Ingredients:
    Fish of choice
    Garlic - 3 cloves minced
    Shallots - 1 minced
    Green Scallions - 2 stalks chopped
    Thai Chilis - 1 Tbsp chopped
    Sauce: To a bowl mix together
    5 tbsp fish sauce (I used 3 crabs brand)
    4 tbsp sugar
    1/4 tsp salt
    1 tsp black pepper
    2 tsp Vietnamese caramel sauce for coloring
    OR Dark Soy Sauce for substitution
    *You can also make your own by heating up 1 tbsp cooking oil plus 1 tbsp sugar on med high heat, stir until it reaches a dark golden brown color.
    Heat up a large pan with 2 Tbsp Neutral on medium high heat
    Add minced Shallot & Garlic
    Sauté for a couple of minutes or until fragrant
    Add in Fish
    After 3 minutes, carefully flip the fish
    Pour in the sauce mix
    To evenly coat the fish with the sauce, occasionally use a spoon to drizzle the sauce from the pan onto the top of the fish
    Turn heat to medium low
    Cover with lid for 2-3 minutes
    Remove lid
    Continue simmering with the heat on med-low
    until the sauce thickens
    Add in the chopped green scallions and Thai chilis
    Serve with a warm bowl of rice and enjoy!

      Looks like mackerel fish steak fillets to me.
