I grew up here in Texas eating King Ranch Chicken Casserole - perfect for bringing to get-togethers of any kind! It's a staple of family reunions, Church dinners, etc... 😎
Thank you for all your videos, as a Irish man living here in Washington State, I grew up with zero BBQ experience. Your knowledge is my to go to person each and every time I need any tips & tricks. So Thank you Matt. 👍🇮🇪
Made this yesterday and turned out AWESOME! No Cream of jalpeño in KC, so I took two cans of cream of chicken and mixed in a small can of diced jalapeños instead. This was absolutely AMAZING!!!!!!!!
Made this for dinner tonight and everyone loved it! I halved the recipe and cooked it in my cast iron skillet instead of the 9x13. I also added black beans. Otherwise, I followed it exactly. Definitely going to make this again. We enjoyed it with chips. I could also see eating it with a side of corn bread.
Fantastic recipe, Matt. Thanks to you and Aaron. I used cream of chicken and cream of celery. No cream of jalapeño at the store I was at, and the wife is not a fan of mushrooms. Everyone at the table was very pleased!
Make the recipe your own. Cooking is the greatest combination of chemistry, physics and biology in the human experience, and definitely an art form. Art is subjective, but there is no good or bad art. It is only different.
Love this stuff Matt! My wife makes her own recipe simular to this one. Just about EVERY time the grandkids come to stay with us they always ask her for King Ranch Chicken. It's definitely comfort food for us. Happy New Year my friend!
Matt…..I sadly had to move out of God’s country to Arizona for my wife to pursue her goals…..I LOVE this dish and am headed to the store to get the stuff to make your version today. Thanks for the recipe and keeping Texas traditions alive…!!
I actually have Almost always put my own spin on recipes. That is the greatness of cooking outside and dishes like this. Great recipe Matt. Will do soon.
Another great recipe. I visited the new store. Nice set up. My 9 year old asked if there was a church in the back cause she saw the all the church signs…lol. Enjoy the time off with family.
I just made this recipe tonight. Different from anything I have ever made. I don't have all the Meat Church seasoning yet. I used the Holly Cow seasoning for the chicken. From Ohio, I did find the Jalapeno soup at the Meijer store. I did add some rice and I think some black beans and/or corn would be a great addition as well. Topped with sour cream and hot sauce. Quick meal! 👍
Yep, everyone has their own recipe for this. This one looks really good. Love the addition of the crushed NC Doritos. It's also great to put a little sour cream and salsa on top when serving.
If you don't have Cream of Jalapeno locally, Campbell's Fiesta Nacho Cheese soup is a great alternative. Just made this recipe with it and it tasted great!
I live up in Michigan, and I was in Lowe’s hardware tonight picking some stuff up…I went over by the smokers and grills, and found that they have all of your seasonings! I was so excited! I bought the Holy Cow, Holy Gospel, and Holy Voodoo, and I can’t wait to try them out!
We put sour cream in ours. Tostadas is a great way of having that crunch . You can cook this and make it into tacos 🌮 if you want. We also have guacamole with ours. Also I suggest some liquid hickory smoke.
I grew up eating what my mother called green enchiladas. i watch cooking shows all the time and I have never seen anything close to it until this. I grew up outside of Ft Worth. We use ground beef and canned green chiles with cream of mushroom or chicken soup. Layer corn tortillas, the beef and chile mix and cheddar cheese. Not exactly the same but likely the same root. Loved seeing this.
Matt, I just discovered your channel! This looks “to die for!!” Can’t wait to try it! Btw, I’m Paul G’s mom and, of course, Grace is my granddaughter!! Please tell them hello for me. My hubby & I were in your shop for the first time during Christmas when we came to visit them. I must say, we were very impressed!!
I am so happy that I have found this channel! Matt has kind of dispelled EVERYTHING that knew about what was popularized about barbecue culture in the past. I grew up thinking it was a bunch of people hoarding secret techniques, rub recipes, etc. Matt has shown us that the most famous and successful people in the industry are willing to share tips, tricks and what others would consider trade secrets. The openness of the culture is awesome and the fact that Matt has only ever assured us that there are many great ways to make great food and that he can respect that everyone may have preferences that don't agree with others' PERFECT way to make something. On this, I made the casserole for my family tonight and it was delicious! My family loves mushrooms so I added a bunch of diced mushrooms and then, I personally used spicy nacho Doritos, cream of chicken, and a sharp cheddar. The family ate it up. Great recipe!
I'm from DFW and grew up with this. We always called it Mexican Chicken and I still make it to this day. It's amazing! I'll have to try some of the things you did in this video to jazz it up a little. Thanks!
I made this for my wife, daughter and grandkids tonight. My 14 year old granddaughter said that it was do delicious that I should cook (in the house) more often! Because I usually only cook on the grill or smoker.
Awesome video as always!!! The guitar music in the background is so off the charts!! I have done so many of your recipes and thanks to you my wife has let me take over most of the kitchen and the shelves are full of all your seasonings!!!!........ BUT...... I dont have that music in the backround!!! You should put out a Meat Church Sound track!!!!!!!!!!!!!!! I would buy it in a heartbeat!!!
This is an amazing recipe! We made 2 batches froze one for another day and cooked the other one for tonight! Looking forward to more meat tweets! Thanks Meat Church and fam!
Matt For The Win Again!!. Made this recipe for A dish in the neighborhood for playoff games last week along with Meatchurch Sausage Balls and was jammmm upppp. Never Fails.
My grandmother taught me a similar recipe back in the late 80's. She called it Mexican Chip Casserole. Only real difference between yours and hers is the tortillas. My grandmother made a bed of crushed tortilla chips instead. Always loved this dish and still make it.
Have to give this a try Meat Church hasn’t disappointed yet. As for it being to cold I’m in Canada and I use my traeger all year long sometimes it just takes a little longer to get it done
Wow, I haven't made this in years but when my kids were young back in the 90s we had it all the time. Just got out of making it since they moved out I guess. This is WAY more than what we did though, for our cheap and easy dish. Can of Ro-tel, can of cream of chicken, big hunk of velveeta, cooked in the microwave till cheese melted, stirring now and then. Then add two deboned and chopped leg and thigh quarters and 10 torn up corn tortillas. Mix that up, put it in a pan and bake till bubbly. Good with lettuce, tomato and sour cream on top.
Thanks for sharing another great recipe.. Just so happens today I am smoking some pulled pork with the meat church honey hog, honey bacon and gospel. Meat church trifecta for the win.
My first taste of King Ranch Chicken was when Mom found the recipe in an Oklahoma Natural Gas bill in July 1976. That recipe said boil a chicken. Now we use a rotisserie chicken from Walmart. One of my favorite comfort foods. Doritos on the bottom, chicken then the soups, chili powder & Rotel, then topped with Cheddar. Just the best. We found some in the freezer the other night and it was an unexpected treat!
Made this last night on my Yoder. Came out great. Could not find the cream of jalapeno soup so used cream of chicken as a substitute. Very tasty. Will add this one to my rotation. Thanks.
Wow Matt, that was FIRE!! I have made easily 2-dozen of your recipes and each one of them are fantastic. The Holy Cow Treager burger is my favorite, until the butter burger came along. My top requests are your Jalapeño poppers with chorizo and the gochugang drums, oh and the Fiesta wings.
Great recipe! Thx, Matt! Made this last night using pulled pork, what I had on hand, and the whole family loved it!

100%!

Love the idea of mixing cream of chicken with diced jalapeños!
I think, sometimes, we need Patrick to bring us an HEB next. 😉
Thanks for this comment. Alabama doesn’t carry cream of jalapeño either, and Google doesn’t really give any subs 😂
Same
I have never known of cream of jalapeño. That tip in itself made the video for me. It looks absolutely amazing! Thanks.
H.E.B.

Traeger has a great cornbread recipe. I made it with Matt’s Texas chili and both turned out gooood.
Beans sound like a really good addition.

My Grandma makes this every Christmas using a more enchilada like red sauce and fritos! its so good! try it with home made red sauce! love it!
Absolutely love the recipe . Took it upon myself to add sour cream at the end along with fresh Doritos. Absolutely kick a** recipe thank you so much.
Just made this for the first time and it won’t be the last! Family loved it.
Man I grew up eating this! One of my families favorites! It’s really good with rotisserie chicken as well
Yessir i cheated and bought the already roasted rotisserie from Walmart. Turned out great.
My mom used to make this when I was little. Definitely going to add it to our dinner menu this next week. It’s so good!
Fantastic recipe, Matt. Thanks to you and Aaron. I used cream of chicken and cream of celery. No cream of jalapeño at the store I was at, and the wife is not a fan of mushrooms. Everyone at the table was very pleased!
I made it using thighs. Absolutely great. Used extra chicken mixture for omlettes. Thanks for the recipe!
Wow, I know what's for dinner tomorrow night!!! Have an awesome Vacay!!!
Thank you!!!
Gonna give it a try with poblano... Will have to try with Hatch green Chili's when in season too ... Yummmm
Make the recipe your own.

Great recipe, thanks Aaron Lang and his Momma and Meat Church for the amazing casserole. Made it last night after gathering the HEB cream of Jalapeno.
smoking meats is our happy place (that's why we come to your channel, matt)...but sometimes a comfort casserole just hits the spot. this is awesome!!
Love it!

Granny made this every time I visit. My childhood favorite
Love that!
King ranch casserole is so good. My Mexican aunt makes the best king ranch casserole.
My family has been eating this for 60 years. My great uncle was the cattle boss on the King ranch back in the 1920’s
We put sour cream in ours. Tostadas is a great way of having that crunch .
You can cook this and make it into tacos 🌮 if you want. We also have guacamole with ours. Also I suggest some liquid hickory smoke.

This recipie was great. No cream of jalapeño up North so I used a creamy nacho cheese soup. Thanks for this one. We enjoyed it.
I’m in NE Wisconsin. Found it at Meijer under the store brand.
Great tip!!!!!
Thanks Matt, I'll be making this for sure. Happy New Year !!!

Love the music track!
I make a variation of this but I use green enchilada sauce instead of the cream of jalapeno and cream of mushroom, going to try this one for sure
I'm not a mushroom fan, so the green enchilada sauce sounds good. Thanks for posting!
@@basophil also add some sour cream to get the creaminess
Sounds tasty.
Looks damn good and certainly worth a try. Thanks Matt .... and Aaron for inspiring us part timers.... it is a blessing 🙂 again, many thanks
