- King Ranch Casserole is classic Texas comfort food. This southwestern dish is very simple, and very delicious.
No one know the origins of this casserole. It is not tied to the massive 825,000 acres King Ranch in South Texas. It seems related the Mexican dish chilaquiles. It was popularized using canned ingredients in the 1950s and every Texan family has a slightly different variant. This particular recipe comes from my good buddy Aaron Lain and his mother.(thanks for sharing)!

If you don't have Cream of Jalapeno locally, Campbell's Fiesta Nacho Cheese soup is a great alternative. Just made this recipe with it and it tasted great!

Made this for dinner tonight and everyone loved it! I halved the recipe and cooked it in my cast iron skillet instead of the 9x13. I also added black beans. Otherwise, I followed it exactly. Definitely going to make this again. We enjoyed it with chips. I could also see eating it with a side of corn bread.

Traeger has a great cornbread recipe. I made it with Matt’s Texas chili and both turned out gooood.

My Grandma makes this every Christmas using a more enchilada like red sauce and fritos! its so good! try it with home made red sauce! love it!

Yessir i cheated and bought the already roasted rotisserie from Walmart. Turned out great.
Made this yesterday and turned out AWESOME! No Cream of jalpeño in KC, so I took two cans of cream of chicken and mixed in a small can of diced jalapeños instead. This was absolutely AMAZING!!!!!!!!

Yep, everyone has their own recipe for this. This one looks really good. Love the addition of the crushed NC Doritos. It's also great to put a little sour cream and salsa on top when serving.

King ranch casserole is so good. My Mexican aunt makes the best king ranch casserole.

Fantastic recipe, Matt. Thanks to you and Aaron. I used cream of chicken and cream of celery. No cream of jalapeño at the store I was at, and the wife is not a fan of mushrooms. Everyone at the table was very pleased!
I'm from DFW and grew up with this. We always called it Mexican Chicken and I still make it to this day. It's amazing! I'll have to try some of the things you did in this video to jazz it up a little. Thanks!

I live up in Michigan, and I was in Lowe’s hardware tonight picking some stuff up…I went over by the smokers and grills, and found that they have all of your seasonings! I was so excited! I bought the Holy Cow, Holy Gospel, and Holy Voodoo, and I can’t wait to try them out!

I just made this recipe tonight. Different from anything I have ever made. I don't have all the Meat Church seasoning yet. I used the Holly Cow seasoning for the chicken. From Ohio, I did find the Jalapeno soup at the Meijer store. I did add some rice and I think some black beans and/or corn would be a great addition as well. Topped with sour cream and hot sauce. Quick meal! 👍
Gonna give it a try with poblano... Will have to try with Hatch green Chili's when in season too ... Yummmm

I made this for my wife, daughter and grandkids tonight. My 14 year old granddaughter said that it was do delicious that I should cook (in the house) more often! Because I usually only cook on the grill or smoker.

I grew up eating what my mother called green enchiladas. i watch cooking shows all the time and I have never seen anything close to it until this. I grew up outside of Ft Worth. We use ground beef and canned green chiles with cream of mushroom or chicken soup. Layer corn tortillas, the beef and chile mix and cheddar cheese. Not exactly the same but likely the same root. Loved seeing this.

My grandmother taught me a similar recipe back in the late 80's. She called it Mexican Chip Casserole. Only real difference between yours and hers is the tortillas. My grandmother made a bed of crushed tortilla chips instead. Always loved this dish and still make it.

As for it being to cold I’m in Canada and I use my traeger all year long sometimes it just takes a little longer to get it done
