"Sister, Sister" is another one. Originally aired on ABC as part of its then popular THIF lineup, it was canceled after two seasons, then it was later picked up by CW(WB back then), and lasted four more seasons before being canceled for good.
Futurama ended their second try on a great note and it breaks my heart it’s been revivified. Scrubs should’ve gone with the end of the 8th season and not even tried with the 9th season. 😣
X-files could continue, in the 'new' series there where a male and female agent that looked like Scully and Mulder, so to follow them with the paranormal/aliens trope could be perfect if done right afcours.
Buffy? The show was picked up by another network before it ended, so they actually rewrote the fifth season (originally supposed to be the last) to better accomodate the continuation, but still, for quite some time they thought it was done for good. And Chuck, of course. It was on a brink of cancellation pretty much after each season finale AND after each mid-season finale, and it still managed to stay on air for five seasons - mostly because of Subway, which, after hearing "we're cancelling Chuck", unerringly replied "then we're taking our advertisement elsewhere". Fans even put up with blatant product placement, feeling that Subway deserves it.
The X-Files was never cancelled by FOX (either time). Both times Chris Carter personally chose not to continue the series (for different reasons each time).
Beavis and butt-head should have gotten the bad reviews instead of Baywatch and it's the show that should've been canceled after the first season that not Baywatch.

You've left out Mystery Science Theater 3000, canceled on Comedy Central, Sci-fi Channel, and Netflix. But it's still going, this time independently.
