I think your ingredients should be in the description but seeing as it's not, i'll put them here for anyone who doesn't want to go looking for it the way I had to... Ingredients for 8 servings PIE CRUST 2 cups all purpose flour, plus more for dusting(250 g) 1 kosher salt 1 ¼ sticks unsalted butter, cubed and chilled 2 large egg yolks 4 tablespoons ice water FILLING 2 cups pecan, halves, divided (250 g) ¾ cup light corn syrup(165 g) 3 large eggs 1 cup granulated sugar(200 g) 1 teaspoon vanilla extract 2 tablespoons unsalted butter, melted ½ teaspoon kosher salt
Baked this yesterday as you guys instructed here. Some notes; 1- The depth of the pie dish is not specified. I had to guess the appropriate measurement. 2- Followed all the instructions until after the part where we introduce the filling on top of the baked pie crust. I successfully added the mixture, decorated the top with more pecans and started the first 20 minute baking. Then went away to watch some videos. When I went there to check the situation after 15 mins, I saw that the top was blackened, pecans and the pie crust alike. I immediately took the pie out, covered it with foil, and started baking from the bottom side only. Judging from the look and the smell, I took the pie out after 25 minutes and it was already overbaked a little. It still tastes good, but the crust is just not exactly to my taste. So either my oven cooks faster or there is a problem with the recipe. Heads up for everyone who wants to try.
I'm guessing it's your oven. I bought an electric Oven from Sharp this year and it turns everything into hard as cookies in minutes. Bought it for making pizza and no matter what adjustments I make to the dough recipe, the crust turns into toast. Same recipe brings out perfect pizzas from the pizza oven in my restaurant.
hey! i tested this recipe, in case it helps someone. on last baking step, with tinfoil, DO NOT leave it for 40 minutes. i checked it at 30 minutes and it was already a bit too burnt, but it still tasted good. i followed every step of the crust religiously, checking at every ingredient, but it didn't end up good. maybe i did something wrong but i'd advise a different recipe for the crust. mine couldn't even stay in one piece in order to place it in the bowl. so i had to gather the bits in the pie tray and try to make them into one piece, and it ended up too thick. the flavour though, was amazing! i removed a quarter of the sugar from the recipe and replaced it with 2 tablespoons of dulce de leche. it was heavenly, tasted exactly how i hoped. thanks! p.s.: i'm not a native english speaker, sorry if some words sounded weird, i don't know much about baking vocabulary :) and that's also why the pie crust recipe is very foreign to me, i've never eaten that before!
I made it and it turned out great. I changed the recipe a little and would recommend toasting the pecans that go on the top before adding them to the pie and then baking it uncovered for 45 minutes. It’s not shown in the video but I definitely suggest poking holes in the crust before baking so the air can escape as well. Really easy, would make again!!
@Blondie053 ....A few weeks ago I watched a video where pecan pie was made with pancake syrup---an idea to use up a bottle sitting around for a while. I only use flour--I've found cornstarch thickens only temporarily then breaks.
Please do not use this recipe. Try to find a southern style recipe that calls for cooking the filling first in a double boiler. You will get much better results.
To me, this reads more of ‘human music’ from Rick and Morty, or at least music that plays in an npc’s brain as they go about pretending to have emotions 😂💅🏼
I absolutely love pecan pie. It is definitely my favorite holiday pie. I don't like pumpkin or sweet potato. Apple is good. Pecan pie is the epitome of a slow Southern day with a huge spread on the table and football on tv.
mani kyles I, unfortunately, do not have a kitchen to comfortably cook in, and only one shelf in a shared fridge to store food in, leaving no room for such as this.
This is my favorite pecan pie video. So fast I have watched it several times, and even stopped it to soak it in several times. Delicious!! I would like to find a substitute for corn syrup though as it has definite health side effects that I want to avoid. Otherwise, clear and fast, no wiggle room for wasting time. Easy to watch. Maybe a new form of meditation for myself personally. Watch it again!
There is a lot to be learned from today and I remain a recipe city with you and keep improving myself because you are our master and we are learning from you 👍🤓👍❤😳💛👍❤
I ate a pecan pie in Austin, TX that used butter instead of corn syrup. It was so rich and packed with flavor. I am happy to see yours has butter in it. I will try it out. Would brown butter enhance the flavor? One last thing. A few years ago my pecan pie didn't set up properly. No worries. I scraped out the filling, broke up the crust, mixed the two together and topped ice cream with it. It was almost a deconstructed pecan pie. No one cared! It was gone before I knew it!
Pecans are sweeter and less bitter than walnuts. Pecans are probably softer, as well. I've never heard of a walnut pie, but I suppose you could do it if you really wanted to.
Corn syrup is not an absolute must. Although most recipes call for it, you could make a pecan "chess" (a pecan sugar) pie. I have a recipe for it on my channel. A lot of people say that too much corn syrup makes it overly sweet, anyway...
Corn syrup can be substituted with a mix of white sugar and water or honey or even molasses. Google can give you all kinds of ideas for a substitute!! Enjoy!!
Left tasty in charge of my thanks giving This year tried the whole turkey , potatos , chocolate chip cookies and the pecan pie. I thought the pie had a good flavor but the texture was off really sticky instead of gooey
Use a bit of pastry rolled into a ball to gently press the pastry against the side of the baking dish, to ensure the pastry sticks to the dish. Also, crush up the baking paper before you place it over the pastry, it will take to the shape of the baking dish easier. Gently ease the paper into the center of the baking dish with the back of your hand, then push it to the edge of the bottom with your fingers. You’re less likely to mess up the crimping of the pastry. I know they didn’t, but this is a slightly more efficient way. Happy Baking xx
