Time management is so important for any homestead. I must admit, this year so far has been far from productive. My knee replacement surgery has gone well… I may need hip surgery in the Fall. My mojo has left the building! I’m trying really hard to find it again, but I’m hoping the more I get outside in the fresh air and dirt that I will find it there! ♥️🤪👍🙏
If you like pulled pork as well as pork roast, I like to cut mine in fist size chunks (to fit in the jar mouth), simpe season, and saute EVERY side. Then jar it, add 1" broth. Process. Sauce it up when you open it. Works for beef, pork, lamb.
I am cleaning out my freezer also. Getting ready for the next canning fall season. I can whatever I see something on sale. Thanks for all you teach us.
I love canning in the winter time to warm up the house. However, there is nothing better than a fresh ripe tomato with a canned pork with barbecue sauce sandwich in the middle of summer that I did not have to heat up the house for.
Well, okay, I went and checked out your "library" and found the demo of Yorkshire Pudding Pie. Yes, I can see a lot of different applications for it, and they would all be fantastic. Sadly I don't have a casserole dish that is that deep. Could I use a wide cast iron pan and adjust the time?
❤ canned roast! We opened some lamb last Sunday, and a qt of summer squash. Bx of doctored couscous, carrots. Less than 30 mins for fully cooked dinner, with a guest. He brought mac&cheese, and flan (Latin caramel custard pudding). It was fabulous!! Chuck roast in the jar yummmm.
🤗Ohhhh...that pork meat wrapped and tied sure would be awesome pulled pork with your delish sassy bbq sauce as sandwiches (leftovers for Howie's lunch w/potatoe salad and baked beans😉👍🏻) and watermelon for dessert 😁
Would a rubber maid kitchen type of glove help you with holding the cold meat? Another tip I use. Don't laugh, but I use a small toilet brush to help clean Mason jars. I have arthritis in my hands and it works great. Thinking outside the boxes. Great video on the pork, thank you.
I just finished canning the meat from our freezer (pork, chicken, beef) to get ready for the new season. Patiently waiting for the weather to warm up. We are well below the normal highs here is southwestern Ontario 🥶 Also, since switching to For Jars I have had every jar seal. For the couple of years during the pandemic that was not the case. I had seldom had a seal fail (20 years+ of canning). Pandemic time and the quality of the well know name brand seals declined. I was having at least one seal per canner load. I can’t say enough good things about For Jars
I know you cold packed these but when I hot pack my pork or beef or chicken I brown them up first and add the corresponding broth instead of water. Also the second thing i learned is oil and vinegar dont mix unless you add an emulsifier (the first thing i learned was you make the roux first!)
Don't ya just wish that in real life you could fast forward things like you've done here with cutting up that pork. In quick time and not having pain when doing it. I've done that with partially frozen meat too then I put it in the refrigerator let it thaw then packed my jars gets more in the jars well a little more anyway. Good night and God Bless you 🙏❤️🙏

I'm feeling extremely stupid. As a first time meat canned, I thought you had to add water when you canned meat. Now I'm wondering what all that meat I canned will taste like.
Canned pork makes amazing tacos, bbq sammies, and pork gravy over noodles or mash!

With cold water start and partly frozen meat, don’t worry in order for the canner to spout steam all contents must be hot enough! So no worries 🥰
you still have to vent the canner for 10 minutes.

I've been canning my pork roasts too. Beef I'll roast & use for stews, but prefer canned pork roasts.

I would have canned those for a longer time since it was partially frozen. Be afraid it would not have the core not come to proper temperature.
75 minutes is plenty long enough. Especially since it took all that time to come up to pressure

I have never tried it. You may want to try it with one jar but I would google it first
Sugar content of bbq sauce might burn with time necessary to can the pork.

I canned tongue a couple of months ago. I made taco meat with the tongue, Jalapenos, cilantro, garlic, onion and tomato. Turned out fantastic!!

You don't add liquid to raw packed meat and you don't rob pack hamburger
