    Had to share with someone who'd understand (I don't know anyone else who cans...it's a shame.) Pressure canned my first beef roast and ugly chicken (a thing of beauty) a week and a half ago and came back exhausted last night from a week long trip. Popped open one of those beef babies, made some onion gravy with the broth and heated the meat in it. Cooked some rice, popped open a can of home grown green beans...heaven! That roast tasted like I've always wanted my pot roast to taste--tender and flavorful!!! I wolfed it down like I hadn't eaten in a week! My first all from the pantry meal--I'm hooked for sure!!! Thank you for teaching me!

    I haven't canned beef for years, but it's the best meat ever! My mom used the wooden handle of a wooden spoon to pack the meat better into the jar, she then drizzled just enough water to fill the cracks. Not much at all. Salt and a shake of pepper. She was pretty stingy about adding much fat, but she purposely put a fatty piece as the top piece. Then if it was a little dry when she opened the jar, she just discarded it.

    Roast beef is pretty much my choice for the ' if you could only eat one thing for the rest of your life'. You were one of my primary canning teachers, especially for meats. Fragile grid and hurricane season mean I don't trust freezers. I'm now the proud owner of shelves of stable proteins. Being able to shop sales in a big way is great.

    Everyone here with a canner you're afraid to try....it really is easy. Start with inexpensive veggies to get comfortable.

      You can do it ladies! You can run jars of water for test runs. Then do simple, inexpensive things like carrots and green beans. Build your confidence and soon you'll be putting up meat, too!

      You can do it! I started with jars of water and was so proud of myself when the jars pinged to indicate sealing and then I tried the water and it was fine LOL. Then I tried dried beans because they were cheap and I cannot tell you how much we have enjoyed having already cooked dried beans on the shelf, it makes everything much faster for taco night or homemade smoked barbecued beans.

    the mrs. here... my mom has been living with Crohn's for over 40 years. tell her to hang in there, we're all rooting for her quick recovery (hugs). an idea for your canned beef. cut it into smaller diced pcs and use for pot pies/hand pies; pull apart and season to make your own tamales; shred, season, and thinly spread on a flour tortilla with cream cheese, minced onion, and sliced green olives. roll, chill, and slice...um, that's just a few off the top of my head. hope this will trigger some more ideas! great video and slicing half frozen is a great idea for cutting to size you need/want. if worried, just let it thaw while you clean stuff up and get set up. just love it!!!

    Favorite use for canned roast or beef stew meat is to thicken broth with a little corn starch and serve over buttered noodles

    Thanks to you I've got canned beef in the pantry and have made a stew meal like you said. It is a little sad to can a roast but we just don't eat big 'roast' meals now. We get more out of a good roast when it is canned. I'm using just a bit of salt in case of SHTF-if we have to use canned meats for our beloved 4-legged family members I don't want much sodium. Extra ideas for those meats: a quick pot of beef/mushroom/barley soup. Use canned 'shrooms and Instant Pot some barley. Oh yeah. Keeping your mom in my prayers as well as her medical posse. I have a family member who had to deal with Crohns and it was not fun. Bless you for being so loving and taking such good care of her.

    We had two beef butchered in April. I have a lot of pot roasts in the freezer and this is the perfect way to get it out of a freezer and on a shelf. I love easy meals.

    Thanks so much for your meatball and roast videos...I did them today only 6 jars each but they came out great...I trimmed the roast pretty lean and still when I took them out I had full jars of juice was pretty tickled about that,,,,,,GRAVY....I did have 1 meatball that would not fit anywhere....lol it was so good.....Thanks again

    That was fantastic. To be honest I get really nervous with canning meat. Your experience and confidence help to encourage me to try. That meat was pretty awesome. I can imagine right now at the grocer's or butcher's that beef is pricey. Thank God for mama's freezer...been feeding folks since the beginning of time. Thanks for sharing.

    Very cold or simi-frozen meat will definitely take longer for the canner to come up to pressure. With the cold meat and cold water, canner very slowly heats so I find other things to do in kitchen. Lovely roast awaits us!

      I have a few beef and pork roasts ib the freezer given to me about a year ago. They are all wrapped in plastic and paper from butcher. Is the meat still good enough to can it? Thanks :)

    Sorry to hear about your Mum and hope you have luck researching Crohns. I did it via TH-cam for Chronic Kidney Disease (CKD).
    My then 92yr old Mother in Law, of @ 4yrs, 'landed'! Long story. TH-cam and its wealth of information and personal stories massively assisted me in educating myself regarding CKD. The dietary information has been invaluable. From having a DNR back in 2018 she now 94yrs old and healthy!
    That beef your Mum gifted you is beautiful! The marbling was a joy to see. Not that lucky here in the UK. Always lean meat! There are times I wish I had the stores you have!!!

    Drove around town to find affordable beef-even grocery outlet was over $8/lb. Found best price at Winco $3.78/lb. Can’t wait to can this over the weekend.

    Try light coffee in your jars! You won't be sorry. I use watered down but have ate it like this since a child and my Mom found an antique cook book with the coffee recipe in it. It's basically like a beef stew with all the veggies you like but the coffee added. It's so good!

    Hope your Mom feels better soon, I thought you could can with fat on meat, I , WAS, a member on a face book group that talked about canning and how to do it. Someone posted beautiful pressure cans of chicken and was worried because there was fat in the Jar. I said I thought a little fat was ok, and the Admin jumped right on me because I said fat was ok! So I left the group immediately. thanks for posting,

    Thank you SO much for this video! I bought some roast on sale and was terrified to can it as my first pressure canning experiment with beef (I was graduating from ugly chicken - which was awesome!) but your video helped me get over my fear and the roast came out amazing! Thank you for showing us step by step so newer pressure canners like me (I've done water bath canning for years but only recently started pressure canning) can learn that pressure canning isn't scary.

    I just learned how to pressure can this month and I’ve been canning lots of meat, beans and vegetables. Also made chicken soup and wish I didn’t add any salt to it 😢. It would be helpful to really show what to do with the food, especially the meat. I just feel overwhelmed sometimes now looking at the food and trying figure out what to make. Part of the issue is my son’s health. He is doing dialysis do to kidney failure and we are trying to get his phosphate levels down and there are so many things he can’t eat now. Would love to see the beef and broccoli recipe. Please keep the canning videos coming! Hope your Mom will be okay and that you can figure out her meal plan.

    I agree with you with canning protein! It's so hard to get enough protein in our diets even when things are normal! (I think you're supposed to have 1 gram/1 lb of body weight?) Looking back on my days, I think I only get about 15% of my daily recommended amount 😅, so I love having readily available, easy to prep proteins.
    PS: I know this video was a while ago, but nonetheless, I hope your mother is doing well 💙

    I have cooked the beef fat down to make beef talo and the crunchy chunks the dogs get as treats. I keep the dog treats in the refrigerator. There similar to pig fat cracklings..but beef cracklings 🌻💕

    I CANNOT wait for our beef to get ready in December. I love all kinds of canned beef. Today's canning adventure. What do you do when someone gifts you 10 pint packages of frozen crappy? Take out 9 lbs of butter, make ghee and get it in the canner. Don't worry canning police, we have done this for years. All good :)

      3.29... chuck roast in a slab... cash and carry is amazing..we got 30 pints and 7 quarts of beef stew. 1.79 for pork butt, two huge ones for under 30...
      We live on the Oregon coast, so going inland to shop is a must! Canning is my new craft, LOVING IT!!!

    I make grilled cheese sandwiches with left over pot roast meat. Cheese on both sides with pot roast sauce to dip it in. A 2 hour nap afterwards happens naturally.

      Wasnt it absolutely gorgeous!! Personally I am lucky enough to have an Aga. Oh if I had a beaut piece of meat like that I would cook it over night in my Simmer oven. So succulent n the meat juices make a gravy to 'die for'!*kt*x

    I really enjoyed the video, Leisa, and was especially glad to hear your opinion of the Orchard Road Lids. I have been trying to decide whether to pull the trigger on the purchase, but I now feel more confident in doing so. I've never tried raw-packing meat, but yours looks amazing. I recently purchased a couple of meat bundles from my local butcher, which came with multiple big roasts. Now my freezer is full, but we'd get better use of the roasts by canning them as you did, so that's what I'll be doing with them.

    I'm living Keto,and maltodextrin is a big no-no!
    Leisa,I LOVE your meat canning videos!
    Watching them gave me the courage,a couple years ago,to start with ugly chicken!
    I've gone on to can corned beef and roast as well.
    Haven't tried salmon yet but if I could find some nice ,fresh salmon in land locked Oklahoma, I would in a second!

      I read your comment about maltodextrin, I didn’t even know how to spell it, why is it a no no? I was thinking it might save the problem my husband who has a texture difficulty with the stew beef and ugly chicken. Courious?

      It's used in a lot of sweetners too.

    I wish we could find roasts that looked that good here in my area of NC, even with lower meat prices prior to all of this. You could take the fat and make sausage or ground beef. Fat is flavor with a lot of meats. My husband and I just had this conversation today. He asked how I planned on canning and preserving things. I said well first I'm going to do it by ingredient, so no pasta sauces, no chili sauces (without beans and meat), etc because 1 month we might have pasta once a week, 1 month we might have a chili once a week or every other week and if I can by 'meal' and not ingredient that defeats the purpose of what we're doing. I don't buy premade pasta sauces so why would I can them? He goes ok understand, so are you going to can me some salsa? Yes goober I'm gonna can you salsa too. Then he asked about all the pepper plants, I said dry them and put them in whatever later. For us, for our needs, for our space, we need to dry them instead of can them. This man is just amazed and impressed with what I've learned in a few months. I would love to try to can meat but right now I'm scared I'll mess up and it will go bad.

      I have canned for years, but never meat. It takes a long time and I was afraid also. Well I watched Sutton Dazes and Linda’s Pantry. Two different ways to do it. I trust these ladies they do it correctly. You can’t always trust people to do right, safely. Also you read the canning books yourself. I did Sutton’s Daze it was quicker. The canner is going right now. Build up your confidence and when you feel comfortable go for it. We live in Florida so freezers aren’t safe.

    I only wish I had started canning meat sooner. I just never thought of doing it. I have been canning for years 40 years. But for us empty nesters, meat would be so practical. So I have a couple of questions. Why don't you trim the meat of fat etc. Doesn't that cut down on the shelf life? And what kind of beef can you use? Can it be brisket, rump roasts something other than chuck? Thanks so much I sure enjoyed your video. I am a first time viewer....

    I always want garlic with meat, so I put a clove on with my meat. It doesn't need salt at all, in my opinion.

    I got some roast on sale for 3.49/Lb (only grabbed a couple) so it’s in the canner now. My first time pressure canning! I’ve followed everything to a T. Even going a little overboard on cutting some fat off. But of course I’m still anxious about doing it right lol. There’s a tiny bubble that appears under my pressure regulator that eventually drops and evaporates. So I want to make sure I’m actually canning properly and that the drop isn’t an issue.
