Are you using a soft nylon pick? That sound is like a cheap laminated guitar. I usually really like the sound of a Taylor, although their pick-ups don't do them justice.
You can definitely get it much cheaper if it’s built in China or Indonesia, and sometimes even Japan or Mexico, but if you want a MIA guitar the price is going to reflect that choice.
I have 3 Taylors and 4 Yamahas, all solid woods. The Taylors are excellent . 2 are 20 years old and a 616 that is from 2017. I have had some problems. A bridge lifted on an 816E, that really shocked me. It couldn’t be repaired or replaced ass it was a discontinued model. So it went back and I swapped it for the 616. The expression system 1 on a 414 packed in having been used 4 times plugged in. A trip back to Taylor at a cost of £400 installed an ES2 and paid for a service. My original 410 is still going strong but needs a refret. The Yamahas are all about 1 to 4 years old and I’ve never had a problem with any of them. Thing is that the Yamahas are excellent guitars costing half the price of the Taylors. If you guys insist on American Made you are always going to pay a vast premium. There are options out there. Taylor are a decent price compared to Martin who seem to have lost the plot on pricing. Look at smaller builders like Bucher.

Has good depth. For my likings(singer/songwriter) I like the new 414ce. The 417e is definitely a badass guitar though.
I just don't get the $3k price tag for a $1k guitar.
