- Extremely EASY for this way! Ready at night and bake in the morning! Fluffy and Soft Milk bread! Easy breakfast bread
Ingredients
210g (0.91 cup) Milk
25g (2 tbsp) Sugar
3g (1 tsp) Instant yeast
300g (2 cups) Bread flour / All-purpose flour
3g (1/2 tsp) Salt
20g (1.5 tbsp) Mealted unsalted butter
Egg wash
Sesame seeds
Bake at 180 ° C (355 ° F) for 20-25 minutes
Important tips
1. You can use melted unsalted butter or room temperature softened unsalted butter.
2. After shaping the bread, place it on a baking sheet. Then keep it in the refrigerator for about 10 hours. the refrigerator temperature is about 4 ° C.
3. After chilling, take out the bread and check if there are any large bubbles. If there are any large air bubbles on the top of the dough, you can use a toothpick or a needle to break them. Then put it in a warm place to rise for about one hour
4. Baking pan size about 23cm
5. Brush the surface with egg wash or milk and sprinkle some sesame seeds as decoration.

Adding the butter after the dough was thoroughly mixed is interesting. My grandmother use to do the same and as I grew up never thought to ask her why. When I was an adult and on my own I made bread a lot but always followed various recipes. Didn't think much about adding the butter or oil at a later stag in the dough. I am 72 and just learning something new. thanks
I think it's because melted butter absorbs dough which might make your bread too dry. I just use room temperature butter to get around this but maybe there's some benefit to melting it instead.
Butter wraps around the flour particles and prevents the formation of gluten. Once the dough is mixed and the flour has been hydrated with milk/water, then butter can be added.
