Smoked Macaroni & Cheese

  • As we keep plugging along on great side dishes for any barbecue meal, it's very difficult to overlook some smoked Macaroni & Cheese! I decided to cook this one on the Masterbuilt Gravity Series 1050 smoker. Here's the recipe:
    8 ounces macaroni noodles, cooked per box instructions
    3 tablespoons all purpose flour
    4 tablespoons unsalted butter
    2 cups milk
    1/4 tsp black pepper
    1/4 tsp dry mustard
    1/4 tsp cayenne pepper
    1 to 2 tsp hot sauce (optional)
    8 ounces shredded sharp cheddar cheese (or whatever cheese you like)
    More shredded cheese to top (up to 8 oz more)
    Preheat your grill or smoker to 425°F.
    In a large pan, melt your butter over medium high heat. Whisk in the flour until smooth and continue whisking until the flour mixture starts to turn brown and become aromatic. Drizzle in the milk, whisking continuously until the mixture is smooth. Add your seasonings and hot sauce and continue whisking for several more minutes until the sauce starts to thicken. Remove from heat and set aside.
    Add the sauce to your drained macaroni noodles. Add the shredded cheddar cheese and stir until smooth. You can serve this as is or....
    Put the macaroni and cheese in an 8x8 or an 8" greased pan. Top with additional cheese and put on the grill at 425°F for 30 minutes or so until it's browned on top and bubbly... Let rest for 10 minutes before serving...

    *Notes*
    Spice this dish up by adding diced jalapeno peppers, crumbled bacon, chorizo, diced ham, or anything or combination of things you might like!

    I know this post is a couple of years old but in response to your question, no - I don't see this as an infomercial at all. Yes, you are mentioning the name of your channel/business in your introduction but so what? That is just common sense. Your recipe looks delicious. I was looking for a good "canvas" to add my own twist to. This looks good to me so I'm going to smoke some of this up for the game tomorrow. Thanks!

    Brother, you were reading my mind there at the end when you said to add bacon. But even better was your suggestion of jalapeno AND bacon! You're developing quite the library of simple sides. And so am I thanks to you! Keep it coming!

    AGC must be making some bank to get JS to do vids for them :) Why is it that everyone on TH-cam today is more about promoting themselves and selling their personal(or paid endorsement items) (I.E. money making) items than just making great videos ? I know...I know that's the way you make MORE $$$$$ on TH-cam nowadays. I just want good videos without all the infomercials etc.

      Just out of curiosity, do you feel like the cooking videos I do on this channel are infomercials? I know we have videos here that ARE just that when it's about a new product. I make those videos for the sole purpose of introducing the AGC audience to a new product. The rest of the videos are about cooking. And YES. I do this to make money but I also do it because I love doing it. I did it for quite a long time in the beginning without making a dime for it. I feel fortunate now that someone is willing to pay me do this sort of work. What part of my cooking videos here needs to change in order for them to not feel like infomercials to you? I am sincerely interested in your opinion on this because I am not a fan of infomercials either. - John Setzler
