However, it has been the best Mac and Cheese I have ever made(according to myself and my family who are very picky themselves). The taste is so outrageously flavorful that it works. Everyone is choosing to completely omit the fact that the Level 3 chef also added smoked bacon and pepper to his crumb topping, instead choosing to only focus on the sweet things he added to it. Honestly, he was probably going for a savory spicy-sweetness with that crumb topping.

So I was really intrigued by the level 3 chefs recipe, so I set myself on replicating it since it’s a pretty simple recipe all things considered. It was so freaking good. The topping had more of an impact than the standard bread crumb, and actually felt like it had a purpose, but the cheese was not lost. It was a lot of cheese and kinda pricey, but it was so freaking worth it. I’m not gonna make it every time I want Mac and Cheese, but I will definitely treat myself occasionally, and will take it to potlucks. Edit: The recipe in the description is definitely borked when it comes to the spices. It’s balanced for roughly 8-10 portions I’d say. I skipped the add water step since it wasn’t in the video and moved the decimal one space left for the spices, so 5.4 grams of Mustard for example. Worked fine for me.

Probably because they recognize that complex flavours usually taste better? There's nothing wrong with just keeping it basic, but basic things like adding texture and contrasting flavors really make a difference. It's like adding some salt to the top of a chocolate chip cookie - it really enhances and brings out the sweet flavor of the chocolate and the cookie.

Your oil isn't even going to stick to the pasta while it is being cooked, so it won't prevent the pasta from sticking. It will only settle when you're actually draining the water, by which point there won't be any need for it.
Just a personal opinion when it comes to Mac & Cheese… use conchiglie (shells/seashells) pasta. It holds cheese so well. Every bite is a burst of goodness.

Probably because they recognize that complex flavours usually taste better? There's nothing wrong with just keeping it basic, but basic things like adding texture and contrasting flavors really make a difference. It's like adding some salt to the top of a chocolate chip cookie - it really enhances and brings out the sweet flavor of the chocolate and the cookie.

Unfortunately I'm a classic level 2 cook: home cook, lots of experience, bit of a food snob...we are insufferable at times!!!!
He took the advice of not trying to turn his hobby into his job. He loves being a home cook and sharing his food with others, but not to the point that he is at level 3 and lives the exhausting life of an executive chef who seems to have made this mac and cheese 500 times.
home chefs watch a lot of videos and recipes of other home chefs, since cooking is a big hobby (and they all remind me of my dad). They all seem really excited to share their cooking with people who aren't their families lol

Your oil isn't even going to stick to the pasta while it is being cooked, so it won't prevent the pasta from sticking. It will only settle when you're actually draining the water, by which point there won't be any need for it.

Just a personal opinion when it comes to Mac & Cheese… use conchiglie (shells/seashells) pasta. It holds cheese so well. Every bite is a burst of goodness.
Can't think of any objective reason this wouldn't work, but it definitely doesn't fit either the Anglophone or the Italian definition of "mac"!
