I remember on QI, a contestant added some information they knew about a particular question, and Stephen went, 'ahhh, wow', and other similar reactions when speaking, but somebody in the comments section pointed out that he already knew the information she was giving him, based on past work he did, so he just pretended to be amazed and ignorant to be polite
Stephen Fry - possibly the cleverest and most interesting man in the world - is still giddy with awe and appreciation at the skills of others, and eager to learn from them. How can you not love him?

Short pastry means that the strands of gluten are short. Working the dough links the polymer strands of gluten, making them longer. Water and autolyzing dough also makes the gluten strands join and become longer.
We're aware, there's plenty of Stephens in Britain they're just hidden around dotted all over and not on TV. Stephen is one of a kind as are many regulars :p you should come, I'd avoid London altogether come up north and enjoy the cold seaside

Had a crack at this yesterday. Cheated on the pastry. Bought the pre-made shortcrust stuff. Came out bloody good though. I was well pleased. Even did the lattice top. No roses though. Just pastry cut into leaf shapes! :D
I'm wanting to do the same. I've hit two snags. 1. What temperature is the oven when he bakes the bottoms half twice for 15mins each time. is it180C the same as when he bakes the whole pie? 2. He says divide the pastry into two, one for top and one for bottom, then at 4:32 he shows laying the cut strips of pastry on a whole other piece, that make three pieces (bottom, top, and lattice). Did he divide the top portion into two or is the whole pastry allotment divided into three, one for bottom, and two for top?
This is not the first time I've seen Stephen cook. The first time was years ago when he did that travel documentary where he visited all 50 of the United States, and he made himself eggs over easy for breakfast that turned out as a gorgeous disaster.
