My setup consists of three cheap phones that I use as pre-paid phones without activating the service since I don't need it. I have all three phones mounted on the windscreen of my cargo van, and I drive a lot, covering 2000+ miles a week on average.
Not all phones are created equal, even if they are the exact same model. Some phones perform excellently, while others struggle to get networks.
One of my phones is set to wifi-only scan with no Bluetooth enabled, and it significantly improves the numbers. However, I have Bluetooth scanning enabled on the other two phones.
I have noticed that over time, the wifi chip's performance seems to worsen, which is why I end up replacing phones every so often. It's worth noting that my phones stay on and scanning for about 16 hours every day.

I just picked up an s10+ and a s21 to add to my arsenal. I need to play around with the settings more and turn Bluetooth off of most of them. It never fails each phone will add roughly 10% more on top of the one I updated most.

Nice video. Ive been using a Samsung XCover 5 for the past 2 months and i find it to be much more convenient than running a laptop or raspberry pi with kismet like i did before. But here is the question, are there any pros and cons with a smartphone vs using wifi card and computer, or even one of those diy wardriving kits you demonstrated?
Coverage on a laptop can be better with stronger antennas and with multiple WiFi cards better view of multiple channels at a time.
Android has some limitations of wifi on newer versions. And there is no "wifi trottling" switch in settings.
And you can't easily upgrade hardware of phone like change wifi card to add something like 802.11axyz or 69GHz support .

I'm thinking about having a mobile to constantly scan for Bluetooth around my car. If someone was to break into my car and their BT is on, then this would pick up their device right?
Then how hard would it be to drive around the town waiting for this to ping up again? I can see I would have to drive slower, because the signal is weaker. But would this work in theory?
I have seen an app the police use in the US for this, obviously not for civilian use.

In theory it would work but very unlikely. For example every day I take the same route to and from work and work with the same people but yet I still find 10-20 thousand new unique Bluetooth devices. There is just so much you'll pick up with this it's not best for what you are talking about.

Kismet on your laptop, their may be others but kismet is what comes to mind first. sadly there is no option for iphone.
