Cebu Lechon Belly Oven Recipe | Roasted Pork Belly Roll

  • Making your own Lechon Belly (roasted pork belly roll) is fulfilling. The outcome of this recipe is similar to the flavor of Lechon Cebu. The inside is tender and moist, while the skin is as crispy as it can be. This lechon is cooked using a conventional oven with rotisserie.
    Take note of the following temperature adjustments in order to achieve a crispy skin and tender/moist meat:
    1st hr: 350 °F (or 175 °C)
    2nd hr: 360 °F (or 180 °C)
    3rd hr: 370 °F (or 190 °C)
    4th hr: 400 °F (or 200 °C)
    Ingredients:
    2 kg Pork Belly (whole slab boneless)
    1 bunch Lemongrass (pounded)
    1 bunch Scallions
    Rub & marinate ingredients:
    1/2 cup Soy Sauce
    1/2 cup Cooking Oil
    1 tbsp Salt
    1 & 1/2 tbsp Garlic Powder
    1 tsp Ground Black Pepper
    Steaming ingredients:
    7 pcs Star Anise
    1 pc Red Onion (wedged)
    1 pint Water

    We don't normally roast pork belly with scallions here in the k. I can imagine the taste is delicious. Can i say that rotisserie apparatus is brilliant !! I never thought you could have one in a normal oven. It's amazing!!

      Thanks! The rotisserie apparatus is really big help. We don't need to turn over from time to time. Scallions and lemongrass adds flavor to the meat while cooking. 🙂

    Wow! I totally love pork belly! We use to cook it around the winter holidays when you may find a lot of lechones for sale... There are many different types of cooking this and somehow the result is always great! 🤗

    What a cool oven feature, I like the roasting option! I'm from Lithuania, and we make many different meat rolls like that (chicken, pork or mixed). We stuff them with some egg omelette, beef tongue or anything you come out with. We boil them and them hold under pressure for several hours to become hard and hold shape well.

    Pouring the liquid on the tray is super efficient! The pork belly easily absorbed all the flavors! And you have a cool oven haha. It's cool how you can turn the pork belly! 😀

      I understand. This method of cooking can also be used for chicken (whole chicken roast).
      By the way, we loved trying other cuisine like Lamb Ouzi (normally served here in Dubai during Eid Holidays), falafel, biryani, kebab, etc. 🙂

    My question is what taste will the lemon grass give? Is it like the lemon taste ? Have never add lemon grease to my recipe but will love to! The pork belly Looks delicious

      Lemon grass adds full flavor to this recipe with citrusy flavour, almost mix of lemon and lemon mint.

      We learned that technique from one of the chef. He said it helps the meat to be moist and tender and skin to be crispy.

    We make porke pickles out of porke belly but this recipe looks like a must try! Dont you usually marinate with ginger and garlic to prep the belly for further cooking?? 🤔🤔 And whats that purple color mark on the porke when you rolled.. It made me concerned for a bit..! 🤔

      Pork pickles? That's new to us. Will check it out. We marinate the pork depending on the recipe. But for this, there's no need to marinate as the flavor incorporates in the meat as you cook as it takes time to cook 😅. The purple color mark is a "safety stamp" marked on meat during inspection made by the authorities. Unfortunately it cannot be easily removed 😅

    What if I put the meat in the tray then filled it up with a little water ? I learned that I made a mistake by not putting the meat on a grill and just the water in the tray separately. Is there a remedy for that? I will be keeping my fingers crossed.. Any advice / comments / suggestions; I would appreciate it. Thank you. :)

      Not sure po what you meant by that. The water should be below the grill as the steam helps in cooking. Note that you need to increase the temperature as you cook the lechon to make it more crispy
