    It's 85 degrees here today but I just had to try this recipe! I have never eaten or cooked with leeks before so I didn't know what to expect. I have to say this recipe is outrageously delicious! It's going into my regular rotation!

    Beth, i´m a lover of vegetable soups. Many times i make them for my dinners. And leeks and onions are my basic ingredients for a really good soup. Also, when i make a big pot of zucchini or butternut squash soup for the entire family i make croutons because my kids love them!

    I love your gardening channel Beth! I've been with you for years since before I became a vegetarian/wannabe vegan and while I still watch all of your videos I do get a bit sad that I won't truly indulge in your recipes. And I love your garden. So this vegan recipe that looks amazing (I love rosemary!) and your "how to grow" and gardening vlogs take the cake (so to speak ;)

    I just made this recipe and it was absolutely delicious! If you're looking through the comments trying to decide whether to make it, DO IT! Also, I used the rest of the leeks to make homemade stock right before making the soup, so nothing was wasted :).

    Beth, this series is AMAZING! Love it, and love this soup. My husband loves rosemary so much, and once we have a yard I'll definitely be growing some rosemary!

    In Malaysia we MalaysianChinese eat the whole leek, not just the white part. Its actually very good as a stirfry with oysterscauce and shrimps! Give it a go! :)

      I use literally the whole leek every time I make anything that has to do with leeks. For instance, I would have chopped up the tops here too, but because they cook a little longer I would have thrown them in first before starting the rest. It kills me when the leaves of so many plants aren't used because their flavors are incredible! Really!

    Hello Beth, loved your recipe!
    I live in France and when I do leek velouté, I use more of the white part! The strong green leaves I throw but I use more of the pale green part :) just thought I'd let you know

      +zincink Oh yum those sound great :) I also at time will throw in some pulled rotisserie chicken into this soup after it's blended and that makes a hearty meal too! :) Enjoy!

    Hi Beth, just wondering if there was a reason you only used the white part of the leeks? I know my mom always cooks the entire leek and its delicious, so I was just wondering if there was a reason to why you only used the white parts. Thanks!! :)

    Beth...love your recipies...please don't waste the leek to the compost pile except last two inches of a stack. All is perfectly ok for other soups like cauliflower, broccoli or vegetable soups, or any root vegetable dishes. It 's easy to freeze for future use, just wash, thinly slice, sliced put in small plastic bag and freeze. I grow leek in my garden, and freeze all unused as described for use all winter long until I can grow again in Spring. Then I just take enough out as needed fir recipe. In your climate, you probably can grow year around.
    Let me know if interested in growing tips...very easy.

    I'm just a starter at cooking, so i have 2 questions to ask:
    Can I pour the soup into a blender and puree it?
    Is there a substitute to leek??
    P.S. I love your new channel

      Cynthia Loh Oh sure! You can definitely put this in a normal blender and if you didn't have leeks on hand I would use either celery or shallots, or both! About 1/2 cup of one or the other or 1/4 cup of each :) Keep cooking! (Beginner cooks are my favorite type of cook :) xx)

      Or also place a dish towel on top of the blender while you blend that will also help :)

      Whenever I put potato soup in a blender, the consistency gets gummy instead of creamy. Is there a trick to preventing that?

      Michele T I'm not sure about this, but you could rinse your potatoes before adding them to the pot so part of the starch washes off from it

    Green parts of the leeks for stock or for the compost heap?!?!?!?!
    There is so much nutrition and flavor in the leek leafs. You can incorporate them into any dish, like a mild onion.
