Why is it that (3 antennas on the AP) x (3 antennas on the client) results in only 2 streams? I thought it might just be a typo but you said it in the video.

The number of antennas isn't associated with the number of supported streams in an access point. For example, multiple antennas are useful for resolving distortions created by the phase shifts caused when the signal bounces and reflects before reaching the access point.

What's the reason behind channels 12/13/14 not being used or being illegal in the USA? I know in japan they can use channel 14. What are the advantages and disadvantages?

Every country regulates their frequencies slightly differently, so you may see differences between the frequency availability across different countries.
