Omg. I have fresh, handmade noodles from a friend's mum, and had decided to make chilled peanut sesame noodles. Heat wave here in Canada, so even if spicy - cold, creamy, nutty noodles with [protein of choice] is ideal for work. And always better than any takeout. 😍🤤 I hadn't thought of coconut milk, but this is exactly why I always keep some on hand!
Ok so I made this and I love it. You already had posted a chicken peanut udon a while back that I love, but the coconut milk does up this recipe and makes it more filling, too. Things I learned...... stick to about a tbsp peanutbutter like you did. I thought I'd up it since i didn't want the peanut taste to get lost but it was a little too much. and add the whole can of coconut milk, again, like you did. I thought it would get too runny but somehow it doesn't and it needs it. only thing i would change is to add more crunch. i used broccoli and half a red pepper but I would add some thin carrot slices next time. this is a winner. thank you!

I was wondering if you could do a video on aisian greens, what they are? how to cook? I love Asian greens at the restaurants but when I'm at downtown Cabramatta/ Canley Vale surrounded by the amazing smells and a plethora of things to pick from it's kind of overwhelming and I don't really know what to grab or how I would go about it.
I might substitute chili garlic since I have that and I doubt I can find the dobanjiang in my local small town store. I do have gochujang but I think that seems like a different flavor than I'd be going for with peanut

I like the texture of the frozen ones better. You just cook them according to packet instructions (some brands are different to others). And then add to the stir-fry.

Thanks for the recipe, this almost looks like an asian version of bolognese sauce. Definitely have to give it a try! If you're making this for kids, would you recommend replacing the doubanjiang/gochujang with tomato paste + a little bit of miso (for the "umami" flavor)?

Question:What's the difference between using fresh or frozen Udon noodles to using dried Udon noodles? Is there any difference in the cooking method?
