      Lance Sheppard {Little River Lawn Care} -HEY thank you so much for asking. My son Corey with his decreasing echo...they want to monitor it again in February. And just found out our insurance company won't pay for the echoes they say they don't think they are medically necessary? Wtheck? It's part of his cancer protocol. So we are fighting with them.
      My daughter Ashley had the nuclear ultrasound, waste of money it was inconclusive so now has to get a biopsy. We are having a yard sale this Saturday to raise the money for the biopsy. Biopsy is scheduled for November 15th. But last night she says the tumor is bigger and she is in terrible pain, coughing is worse and it's effecting her ear and breathing. So I'm trying to see if I can get her into Cancer Treatment Center of America here in Newnan asap. Even if it ends up not being cancer(please Jesus) it's a suspicious nodule and they have some kind of program for uninsured people....so I'm waiting to hear back from them.

    Lori, I'm 73 years old, and my family owned a restaurant for over 35 years. We have used this recipe for many years, except we added the beets and juice to the pan along with 1 cup of sugar and 2 cups of red wine vinegar. No need to bring to a boil, just heat enough to disolve sugar. This will do 2 doz eggs. P.S. onions optional

    This brings back memories! My grandma was PA Dutch and we had these awesome "purple eggs" all the time. I haven't had then in years. I may have to make a batch now after watching this ;0)

    We have a family recipe for 4 generations where we put 1 dozen hard boiled eggs into a jar, then boil 1/2 cup sugar and 2/3 cup apple cider. When the sugar melts add liquid to eggs and then 1 can of beets w/ liquid. Shake the jar and refrigerate. 1st/2nd day great, a little salt and pepper after a week the egg is almost purple inside. Recipe is from central PA from a great/grand mothers
    who canned everything, pickles, peppers, tomatoes, corn, apple sauce/butter, peaches and anything else. Hundreds of Mason jars. They had cold basements to store everything. 1st thing I did when staying in the summer while visiting in high school years, 79/80 was after putting a suitcase in my room was to peel, core and slice a bag of apples so she could make a 13X9 apple pie. My grandmother also had a soda bar where she made the candies, chocolates, ice cream where my mother and 2 aunts served everyone. That was mid 60's which I don't remember but I remember her chocolate peanut bark was to die for. Even the main candies maker in town Gardeners tried to buy the recipe and they're still in Tyrone PA.

    Grew up in PA. Everyone has some sort of Pickled egg recipe. Agree day 3 is when you should start to eat.

    I usually make curried pickled eggs. Mix the vinegar with sugar, salt and mild madras curry powder then pour over the eggs, chopped green chilli and onion. Best left for a week in the fridge.

    pickling spices as seen in other vids about these seems like a good idea, maybe even a strand or two of dill. The idea is to make the eggs spicy so whatever your taste buds prefer is what to insert in the jar. Kinda like pickling beets and adding eggs to boot! One lady even used cinnamon sticks and lots more sugar. Yum.

    This is the way I was shown how to make these from my mother. I wonder if some of this came over with Eastern European immigrants (specifically Russia). Greek and Russian background and grew up just outside Lancaster PA. Made these for a friend of mine from Belarus and he was over the moon. Don't know if it was because of the beets as he loves borscht too.

    I've got 36 large eggs pickling in a gallon jar. Modification -- In addition to beets and onion, I added 1 entire head of (peeled and sliced in half) garlic cloves, plus 1 tbsp pickling spice. My pickling spice seems a little weak on cloves so I added a pinch or two of whole cloves. Plus peppercorns, of course. Hey, a recipe isn't cast in stone. A recipe is a starting point for your own preferences. I'm going to try your mustard eggs next. I've never heard of such a thing. They sound very interesting. Thanks for sharing!

    Hi Lori, love your recipes, but I have a question about the texture of my eggs. After pickling them I found the eggs to be kind of tough. They were delicious but tough to chew, not like if you just boiled them and ate them. Do yours get tough or am I doing something wrong. Let me know....God Bless you. Rudy

      Ours last only a few weeks because we eat them all lol but I believe they will be just fine for about a month.

      My family always pickled their beers with clove. I think it was just a couple of clove blossoms per jar. It really adds an extra layer if flavor. I recommend trying it. Thanks again for sharing. They do look great and the devilled eggs idea was fantastic

    Is the yellow pink? My Mama always made them at Easter with the left over eggs the children didn't eat which was a lot. Her yellow was always pink and it is a fail fir me each time. Can you help me or anyone in here?

      They taste super good. You can taste the vinegar as the bite and then just a hint of sweet. Yum yum

    every one i see is using can beets. why can't you use raw beets ?

    Watched this twice. Sorry, you did this video a year ago. Don’t throw out the beets! You can mash them, add prepared horseradish and honey to you taste. This is so good with ham or eggs and stores many
    Months in the fridge.

    NOPE! My grandma was Mennonite and NEVER used canned beets! Thats not Amish!
