      I have the Mason Tops! ♡ iam not using burping tops for the ACV. I would like to know about apple cider vinegar In its stages,is it a good ferment if the apple juice is hissing when I turn open the top.It's fermenting Right ? Or souring?🍎💞🤔

      Della Smalley I'm older than you and I don't consider myself old in any way, shape or form. I said to a friend the other day that I'd love to do another degree. I'm never going to consider myself old. I'm either alive, or passed over.

    Great video! I started with three jars and two had yeast and the third was a tad "furry" and it saw the disposal. The remaining two hit the fridge after two weeks and I'm enjoying daily, a fermented vegetable snack and ever since I started eating them, I've had ZERO heartburn. Thanks for the video.

    Just as an idea and cheap alternative a tip for people who can not purchase the burping silicone tops. I used simple cheap silicone gloves and put a little hole in one of the fingers. It worked like a charm for burping my sauerkraut if you use smaller glass you might want to secure that glove with a rubber band. Just an idea that worked for me. But I absolutely 💘the glass pucks. Thank you Stacey for all your guys wonderful videos I'm following you since years. God bless🤗

    Just started fermenting/canning and it's a bit intimidating. But my husband tried a small jar of homemade sauerkraut last night (first batch ever) and said it was the best he'd ever had. This vid contained such valuable information! Thank you so much for sharing your knowledge! Your content is truly helpful and inspirational.       I currently have those same issues too. So may I ask how did you do with eating your ferments? I tried eating a little fermented kraut I made from my own homegrown cabbages I made last fall and I believe it made my symptoms worse. I tried eating it twice, just a tiny tip of a fork full then quit, threw it out. So I decided that maybe the cabbage was too hard for me to digest and now I'm fermenting some cherry tomatoes to see how I do on those. I've been really wanting to ask someone who deals with the same digestive issues and ask if ferments helped them? I'm hoping to balance the bacteria in my gut and get rid of this awful gassy bloat torment.

      Have you considered that you might be gluten sensitive or gluten intolerant? Might be worth looking into. I hope you are able to find some relief for your symptoms. Best wishes.

      So yes I love the way my Gardiner turned out and the green kraft with carraway.caraway.. the red with apple is a bit different than I'm used to, but I like it's milder flavor to get my morning 's started since I usually cannot stomach breakfasts. I will also look into your suggestion Patricia ambrose on this possible gluten free ideas it could be some of the underlying issues..thank you all so much

    When I was a kid, we used to make "Crock Dill pickles" and that yeast was always on the top, along with fruit flies and other undesirable things, but the pickles were always great! Mom used to yell at us kids because we'd have half the crock emptied out before they were ready! We didn't know anything but they tasted good!

    I was having good luck with a suction cup to remove my glass weight ... until I misplaced it. Have to find a new one. (It was from a stained glass window ornament and just the right size.) And, yes, I get the yeast on my carrot sticks more than anything -- high sugar content, plus larger pieces. Good to finally know why!

    I used to pickle veggies but now I have found fermenting (much easier). I also used to use a nice smooth rock; LOL I had one for years but lost it somehow. I grow my own cucumbers like I am sure you do. The most economical way. Thanks for your video. I do enjoy watching them.

    My first ferment I tossed because of the film on top. It smelled good but I was afraid of it! Second time around I fermented various colorful peppers, some with heat, with some garlic and onions. Put grape leaves on top and types that with very thick sliced onions. Not having the device to keep air out, I put a plastic lid and backed it off half turn and let it sit. It did bubble over some but the bowl caught that. It tasted wonderful. Even the onion and grape leaves were good. I did not put mine in the fridge. Left it on the counter till the quart was fine. It did not kill me or even make me ill. Can't wait to do that again and try others. Need to invest in fermenting kit.

    Stacy, thank you. I bought the mason tops and started my fermenting journey about 3 years ago. I threw away so many batches that I packed up the mason tops and put them on the shelf until my frustration wore off. Two weeks ago I made my first successful batch (onions and peppers). Watching this video made me aware of kahm yeast---I probably threw out multiple batches of good ferments with kahm yeast! Now I know--THANK YOU!!!! I appreciate all your videos and great explanations.

    A picture is worth a thousand words. I actually talked to Mike Pratt at the HOA after I tried to ferment some cauliflower. I had bite-sized chunks and I tried some asparagus. It wasn't the taste I thought is should had but ate some anyway but the cauliflower, I thought was a failure. Mike thought it might have been because it was all one veggie instead of the mix. I now realize it was kahm yeast. I got my fermentation kit in August, sure wish they had the new "stones" in it then. I am surely going to try my hand at this again, maybe starting with onions.     If you fill the mason jar with fresh brine until it overflows, the kahm yeast will float out of the jar in one piece rather than wiping with paper towels. Paper towels can re inoculate the jar with kahm or other spores.

    It's easy to remove "hockey puck" style weights using a valve lapping tool - basically a suction cup on a stick. For food processing, you want one with a plastic shaft. Mine is a Goodson, but the $10 ones work just as well for this purpose.

    Our fig tree is going crazy with small, sweet figs. Any ideas? Fig wine? We made fig jam, its easy, sugar, figs, a little water boiled down to thicken. We tried fig bread. It turned out delicious!

    As a kid on the farm, we made our own sauerkraut in 5 gallon crocks. I can still smell it sometimes in my reveries! 2 crocks was enough for us and left some to give to relatives without gardens. But these days I just buy it at the store for myself, as my wife will not eat it. Gonna give kimchi a try one of these days. First time I have seen kahm, unless Mom removed it before I got to the jars of veggies.

    I tried doing carrots a few years ago. After the second week I thought they were spoiled because they had this gray film on the top of the brine so I threw both jars out. Ack! They were probably fine! Plus the water was cloudy and I didn't know that was normal. My red cabbage sauerkraut turned out great but the green didn't do very well. I got frustrated and quit doing it for a few years but now I'm back trying things again. So far I've done asparagus, sweet peppers with onion and garlic, 2 jars of garlic, and I have another jar of red sauerkraut going. Wish me luck! You are a big help to me! I watch a lot of the videos on the smart tv so that doesn't let you comment, I have to get on the laptop and like and comment so I'm still catching up with myself.

    Thank you Doug and Stacy. Very informative and clarifying. I'm new at this. Never done it before. I watched a few other TH-cam videos about it before, and they were a bit unclear and cumbersome. Your explanation and method are a lot more clear and simple; and a lot less cumbersome. Thanks for helping me weed through the internet/TH-cam maize. I will follow your directions. God bless.     Clear glass (no lid) baby food jars as well as 4 oz jelly mason jars will also fit in to jars wash them well and don't use the metal covers. Set onto of the food and also fill those with the brine. A tong or clean fingers makes for easy removal. I found old solid glass furniture leg sliders they looked brand new 4-$1 and use those all the time for weights.

    In the spring the halls and rooms are full of seedlings and hanging lights. During harvest there's jars fermenting everywhere. Now I use mostly half gallon jars but there's all kinds stuffed around. Winter it's all about hydroponic along the halls , living room and everywhere a light can hang. It's great but the kids friends figure I'm crazy.

    It happened when I made my own apple cider vinegar. I just made my fermented cabbage, I'm so excited for it. My brother got your fermentation book and now I want to ferment everything 😊🤣 I will be doing your ketchup soon. And I'm currently waiting for more Mason top burp lids, to line my counter with fermentations❤️ love watching your videos, thank you.

    Stacy, I have fermented red onions that are about 6 months old in the fridge and they are slimy. Don’t smell bad, no black spots, just very gooey. Are they safe to eat?

    Hi Stacy, I fermented for the first time and i did radishes, but i have a white covering over the top that formed and i dont know if its ok to still eat , it doesnt look like the kime yeast you talked about, it looks like a cotton ball.
