Ingredients Required For Making Lamb Kofta Curry - Serves 6 to 7
For the koftas -
1 lb minced lamb (please use lamb with little bit of fat as the fat helps in making the kofta juicy). You can also use ground chicken but use chicken thigh meat with fat and little bit of skin so that the koftas do not become dry.
1/2 teaspoon coarsely crushed fresh black peppercorns
1/2 teaspoon dried mint or you can use 5 to 6 fresh mint leaves. Mint is optional
1/2 teaspoon red pepper flakes
1 teaspoon dried thyme or can also use ajwaiin (carom seeds)
1 heaped tablespoon plain unflavored yogurt
1 teaspoon cumin seeds coarsely crushed
1 teaspoon coriander seeds coarsely crushed
1/4 th cup fried brown onions. You can cut one medium onion into fine slices and fry them till brown. Please cool them before adding to the meat.
How To Brown Onions - • HOW TO FRY ONIONS PERF...
1/2 teaspoon salt
a handful of coriander leaves (cilantro) finely chopped
1 teaspoon garlic finely grated
1 teaspoon ginger finely grated
2 sandwich breads
1 large egg
For the curry -
5 to 6 pearl onions or take a small onion, cut into quarters and separate them like petals
1/2 of a small red bell pepper
1/2 of a small green bell pepper
2 medium to large onions finely chopped
5 to 6 large garlic cloves
1 & 1/2 inch length ginger
1 large ripe tomato
1 teaspoon Kashmiri red chilli powder
1 teaspoon turmeric powder
1 tablespoon ground coriander (dhania powder)
1 teaspoon sweet paprika
1 teaspoon garam masala powder
1/2 teaspoon kasoori methi (dried fenugreek leaves).
1 1/2 teaspoon salt or as per taste
1 & 1/2 cups water (please adjust proportion according to your preference)
2 to 4 tablespoons Mexican crema or heavy cream (optional)
1 teaspoon sugar (optional)
coriander leaves for garnish
2 green chillies whole (optional)
sprinkle of fresh lemon juice

Hi Bumbi 👋I made this today. (recipe 143) I missed a recipe out somewhere in my counting 😊This curry is absolutely superb. We enjoyed it so very much. My son is a huge fan of lamb. Even just the koftas alone were extremely delicious. We were saying that they would be great in pitta bread with salad, garlic mayo and chilli sauce. But in that wonderful gravy they were simply delightful. We had basmati rice and naan bread with it. Another perfect Bumbi Night Feast. Thank you. Praying that you feel better soon. This looks _extremely_ good. It's as if my two favorite cuisines (Indian and Italian) have come together. Is the substitution of coconut milk traditional? Cream sounds great, but coconut milk sounds possibly even better and I have some on hand.
Cream is optional. I have given the option of coconut milk in case anybody wants to avoid cream and coconut milk does bring in a nice creaminess to the gravy. Both are optional.

5:20 The ground coriander looks green and flaky. Is it ground dry leaves and not seeds?
I always make ground coriander at home. I grind coriander seeds in my spice grinder.
