How To Cook A PERFECT Chicken Biryani | STEP BY STEP GUIDE

  • How To Cook A Perfect Chicken Biryani - Step By Step Guide
    Today I will share the recipe for restaurant style chicken biryani in a step by step manner. I will show you all the ways to make a perfect biryani starting from making the biryani masala, how to brown the onions, then how to make the perfect rice for a good biryani, how to make those tender juicy chicken and finally how to put together everything to get that wonderful finish. For Kolkata style chicken biryani potatoes and eggs are commonly added.

    SERVING SIZE FOR THIS RECIPE- 6 to 7
    For Biryani Masala
    1 1/2 tablespoons /7 gms cinnamon sticks
    1 1/2 tablespoons/ 7 gms green cardamom
    1 nutmeg
    1 teaspoon / 3 gms mace
    1 teaspoon/ 3 gms black peppercorn
    1 teaspoon/ 3 gms shahi jeera or black cumin seeds
    1 teaspoon/ 3 gms cloves
    For marination:
    1 kilo chicken cut into big pieces
    2 inches ginger, 5 to 6 cloves of garlic - blend into a paste
    1 cup/290gms plain yogurt
    2 tablespoons ground coriander Powder or dhania powder
    1 tablespoon biryani powder
    1 teaspoon paprika/ kashmiri red chili powder
    1/4th teaspoon haldi/turmeric powder
    1/2 teaspoon red chili powder
    For making the chicken curry :
    1/2 cup oil
    2 medium/ 334 gms onions
    3 large potatoes (optional)
    hard boiled eggs (optional)
    1 bay leaf
    4 green cardamoms
    1 inch cinnamon stick
    1/2 of the browned onions
    2 tsp salt
    1 tsp sugar
    1 cup warm water
    1 tsp kewra water/ a drop of Kewra essence
    For rice :
    3 1/4 th cup / 725 gm basmati rice
    2 inch cinnamon stick
    1 black cardamom
    4 - 5 green cardamoms
    5- 6 cloves
    1 teaspoon black cumin seeds/ shahi jeera(optional)
    2 tablespoons salt
    1 tbsp oil
    1 tbsp lemon juice or vinegar
    For layering:
    1/4 th tsp saffron mixed in 1/4 th cup warm milk
    2 tsp kewra water / 2 drops of Kewra essence
    Few sprinkles of biryani masala
    Rest of brown onions
    1 tsp lemon juice
    1 tbsp ghee/clarified butter
    Food color (optional )
    Pinch of salt
    Little gravy of Curry

      @@CurriesWithBumbi Yes I had all the ingredients. I used muslin tied with string for infusing the rice and I actually have two flame tamers in my house. I have everything for cooking. I am obsessed with cooking. Yesterday I made Spanish food. I like to travel the world through cooking. But your recipes are certainly the best ever honestly xxx

    My chicken is marinating now so I can prepare this in the evening. I have all ingredients except for the essence K water, I hope not adding it doesn’t make to much of a difference. Thanks for sharing 🙏

      Kewra water adds a unique flavour to the Biryani but do not worry if you do not have it. You can always buy later and use it next time. It stays good for years and years. You know Christina even I will be cooking biryani today for dinner 😀

    Simply superb!!! Just one request dear. Could you pause or focus your camera and do a close up. As I am a novice in cooking it takes time for me to register some of the spices especially if they are in small quantities or is something I have not seen before. May I suggest you place them separately on some white plate or something having a while background.

    At 2 minutes 28 seconds you said add Anthony powder. The subtitles and the transcription both say Anthony powder. I'm sure they mis heard as I did - is it Amchur (mango powder)? Or is it a spice I don't know about? Help !!!!!

      Hahaha, it is dhania powder (ground coriander). This is one of my earliest videos when the subtitles didn’t work well on TH-cam. Thanks for letting me know as we are provided with much better editing tools now by TH-cam.

A lot of Indian food has three titles Hindu Tamil and English so we get Dhania Coriander and Cilantro all meaning the same thing apart from Cilantro is the leaves ! I've got all that stuff so no worries. Thanks again for a lovely "classy" Biriani. In 1970s parlance it's a Crowd Pleaser !

      I really need to upload a new video on biryani. I filmed this video back when I did not have a camera nor a microphone. I used my tablet and phone head phones so everything sounds so terrible, but it is a very good recipe for sure and I put in my best in my old videos. Thanks for watching .
