Ingredients -
For making the kofta - Makes 15 medium koftas
* 55 gm onion
* 10 gm ginger
* 15 gm/4 large garlic cloves
* 5 to 6 mint leaves or any herb of your choice
* 1 tsp coriander seeds/ 1 tsp coriander powder
* 1 tsp cumin seeds/ 1 tsp cumin powder
* 1/4th tsp black peppercorns/ 1/2 tsp black pepper powder
* 1 large slice of bread or a fourth of a cup of breadcrumbs
* 1 tsp salt
* 500 gm ground lamb or any meat of your choice. Should be ground finely.
For the gravy -
* 320 gm onion
* 10 gm ginger
* 15 gm garlic or 4 large garlic cloves
* 140 gm/ 1 large tomato
* 3 small to medium potatoes (optional)
* 1 tsp turmeric powder
* 1 tbsp Kashmiri chilli powder (please adjust proportion according to your preference)
* 1 tsp cumin powder
* 2 tsp coriander powder
* 2 tsp salt or as per taste
* 1 dry bay leaf
* 1 inch length cinnamon stick
* 5 to 6 green cardamoms
* 1 black cardamom
* 1/4 th cup plain unflavored yogurt
* 1/3 rd cup milk/cooking cream (heavy cream)
* 2 tsp shahi garam masala powder

* chopped coriander leaves or any herb of your choice
* 5 to 6 mint leaves (optional)
* 2 cups hot water
* 3 tbsp oil
* 1 tbsp ghee

Hello, I was always worried about the koftas breaking so I’ve never ever attempted it before but when I saw your video and all your detailed tips and tricks, I told myself I had to make an attempt and I did… the koftas were moist and juicy and didn’t break😅 I followed all of your tips and it turned out perfectly. Thank you for this. I skipped the yogurt and milk as I’m lactose intolerant but I did replace it with freshly blended cashew paste instead. Thanks Bumbi, you’ve given me the courage to now start making koftas 😆😉

Hello Bumbi, I have now been an avid fan of your recipes for 2 years. I just wanted to say thank you so much for this video, as it solved a major problem I had been grappling with over those 2 years. Essentially I couldn`t find a blender/processor that properly blended (as opposed to chopping) garlic and ginger. In the end I resorted to using a mortar and pestle, but even then I never got that smooth liquid amalgamation of ginger and garlic - as depicted in your videos. Thankfully, as the NutriBullet blender was clearly visible in this video, I now know what grinder to purchase! Thank you so much Bumbi. With very best wishes, Hamid

I made the kofta today and toasted and ground the spices before adding to meat. I also made the garum masala from your recommendation. That looks simply scrumptious , i cant wait to cook this. I will try it with lamb as you have Bumbi. But i may end up using pork mince, which gives a more softer and tender texture. Bumbi that's such a different method, of meat in a curry. I'm going to try this one, and of course with my own learned habits.... I used to date this one gal many years ago (an American woman) that would always put chunks/globs of torn bread (and the crumbs) into the loaf as well. For some reason, these globs of whole bread soak up so much flavor and become the most tender, in a toothsome way, parts of the loaf meat. Whether one makes balls or a loaf itself, it's still the same. Tender and tasty!

can the koftas be frozen before they are added to the sauce?
Sure you can freeze them but add the frozen koftas directly in the gravy and heat them up gradually on a low heat
I made this last night, was a bit spicy for my son and nephew, my daughter loved it and as far as I was concerned, it was one of the best meals I have ever made, it was delicious
I am glad you liked it. Please use less chilli powder than the stated proportion to start with. You can always add some later near to the end if it is required.

Okay made this today, turned out very good and delicious, but in future I would salt the kofta meat too, also my meatballs were very delicate and I ended up frying them separately because my pot was more vertical than flat and than I combined at the end. Thank you for a very nice recipe.

You can use tofu but then use dry breadcrumbs as tofu has a lot of water content. You can also add a yolk of an egg to the mix for extra binding and richness.

1. All purpose flour (maida)
2. Chapati flour (atta)
3. Besan (gram flour)
4. Cornflour/cornstarch (to thicken up soups)
5. Rice flour
Not so important ones -
1. Jawar flour
2. Bajra flour

Would this be considered a Kofta Korma? Personally, I sometimes like larger particles of spices. Lightly crushed coriander seeds in a dish gives you a random burst of floral/citrus flavor. It can be intense and some may not like the texture, but I like the complexity it adds. There is something to be said for dishes where each bite is different.
Yes this is a kofta korma. Even I like that slight bite from those whole spices but not everyone likes it.
Great looking dish. But when you losen the mix/gravy with water, wouldn't a stock of some sort add even more flavour? I'd have thought water may dilute it.
You can definitely add a stock for that added depth in flavor

It is more of a korma style gravy and tastes different than that.

Do you not add egg to the meatballs
If you mash it very well for 5 to 7 mins you do not need to add eggs.

You need to fry the koftas before putting them
I don’t fry them as that keeps them juicy and moist
