Hello, I was always worried about the koftas breaking so I’ve never ever attempted it before but when I saw your video and all your detailed tips and tricks, I told myself I had to make an attempt and I did… the koftas were moist and juicy and didn’t break😅 I followed all of your tips and it turned out perfectly. Thank you for this. I skipped the yogurt and milk as I’m lactose intolerant but I did replace it with freshly blended cashew paste instead. Thanks Bumbi, you’ve given me the courage to now start making koftas 😆😉
I had a liver transplant several years ago and now my favourite cuisine is Indian. I’m sure my donor (thank you for the gift of life) was Indian. :-). I love your recipes and as a vegetarian , I try many of them using soy curls.
Hello Bumbi, I have now been an avid fan of your recipes for 2 years. I just wanted to say thank you so much for this video, as it solved a major problem I had been grappling with over those 2 years. Essentially I couldn`t find a blender/processor that properly blended (as opposed to chopping) garlic and ginger. In the end I resorted to using a mortar and pestle, but even then I never got that smooth liquid amalgamation of ginger and garlic - as depicted in your videos. Thankfully, as the NutriBullet blender was clearly visible in this video, I now know what grinder to purchase! Thank you so much Bumbi. With very best wishes, Hamid

I made the kofta today and toasted and ground the spices before adding to meat. I also made the garum masala from your recommendation. Its in the fridge till tommorrow and i will then make for my fathers day meal, hope my family enjoys though Bumbi u never disappoint. Thanks for sharing i will reply to my own post tommorrow night.

Bumbi that's such a different method, of meat in a curry. I'm going to try this one, and of course with my own learned habits.... I used to date this one gal many years ago (an American woman) that would always put chunks/globs of torn bread (and the crumbs) into the loaf as well. For some reason, these globs of whole bread soak up so much flavor and become the most tender, in a toothsome way, parts of the loaf meat. Whether one makes balls or a loaf itself, it's still the same. Tender and tasty!
Okay made this today, turned out very good and delicious, but in future I would salt the kofta meat too, also my meatballs were very delicate and I ended up frying them separately because my pot was more vertical than flat and than I combined at the end. Thank you for a very nice recipe.

I made this last night, was a bit spicy for my son and nephew, my daughter loved it and as far as I was concerned, it was one of the best meals I have ever made, it was delicious
I am glad you liked it. Please use less chilli powder than the stated proportion to start with. You can always add some later near to the end if it is required.

You can use tofu but then use dry breadcrumbs as tofu has a lot of water content. You can also add a yolk of an egg to the mix for extra binding and richness.

These are the ones that are always in my pantry - 1. All purpose flour (maida) 2. Chapati flour (atta) 3. Besan (gram flour) 4. Cornflour/cornstarch (to thicken up soups) 5. Rice flour Not so important ones - 1. Jawar flour 2. Bajra flour
Great looking dish. But when you losen the mix/gravy with water, wouldn't a stock of some sort add even more flavour? I'd have thought water may dilute it.

I've made this recipe twice, following the instructions carefully and completely. The first time I used ground lamb, the second time ground beef. Both were delicious. But don't be fooled by the fact that this video is less than 10 minutes long . . . it takes a long time and quite a lot of work to actually make this dish. Don't be put off by my warning however. If you are prepared to take the time to follow this recipe, you will be well rewarded.

can the koftas be frozen before they are added to the sauce?
Sure you can freeze them but add the frozen koftas directly in the gravy and heat them up gradually on a low heat

If you mash it very well for 5 to 7 mins you do not need to add eggs.
