C/w Nana: Lao Steamed Chicken in Banana Leaf (ໝົກໄກ່ == Mok Ghai)

- Mok Ghai (ໝົກໄກ່) is chicken steamed in a banana leaf.
INGREDIENTS
1 whole Chicken
++ Gizzards, thinly sliced
++ Livers, do not cut too small
++ Hearts, cut in half
* If you don't want to use the innerds above, use another whole chicken or just use half the amount of each of the following ingredients.
1/2 tbsp Salt
1 tsp MSG (optional)
3 tbsp Fish Sauce
1/3 cup Padek (fermented fish sauce)
1/2 cup Sticky Rice, soaked 30 min. or longer
15 Kaffir Lime Leaves, thinly sliced
20 Shallots
3 stalks Lemongrass
1.5 cups Bean Thread Noodles (optional)

I've married and my family are spread apart in the U.S and we don't get together as much as when I was little and I miss all the food my Grandma used to make. But I just wanted to thank you for the videos! So, in my videos I try to explain everything that I think people might ask. So, I try to make my videos like a full class targeting beginners, instead of just presenting the recipe and instructions. I think this way, people who just want the gist of it can forward through the parts they don't need.

Tessa Briscoe Padek is optional, but you should try a little bit with and compare without.
Thank you so much for making this recipe! I’ve been craving for it, I will attempt to make it soon. I have a question, can you also use the yanang extract for this Mok Gai recipe just like how I saw you use it in the bamboo recipe you made, or will it taste weird? And if so how much?
Sweetylaos yanang in my opinion extract is only good with other plants like bamboo and mushrooms.

yes, you can leave out the dill if you don't like it. you can also split it up and make some with and without dill.

nana I have a hard time getting Padaek here, my grandmother used to get someone to make it for me but I can't get it anymore.
Sierra Buckingham You don't live near any Asian markets that sell the bottled padek? If don't have any padek, you can add a little more salt or fish sauce.
The only Asian markets we have here are Korean and philipino market, they have some fish sauce and other things I need but Paedek is so hard to find, do you know any place online I can buy it from? btw I LOVE your cooking!!!
The Filipino store should have sauce similar to padek. You can look for bagoong sauce or anchovy sauce and try that first. That would be cheaper and faster than ordering online. Yes, i used frozen banana leaves. Can't find fresh ones right now.

yes, you can add the eggs with this same recipe. you mean the little eggs inside the chicken right?
