As a Panera employee, I can confirm the ovens are still used and then we also have an oven with the vents on the outside and when we start baking, the place gets warm and smells good 🙂 but the kitchen is under the vents so it spreads more through the place.
Peculiar flex but i as a jimmy employee will note ussually we just shout "hot bread" REALLY loud as we walk the bread through the store (wich probably distributes smell i always thought it was dumb our ovens are away from our bread rack) so that we dont bump into people with the trays because they are instant scar causers but we talk about free smells and how good the bread smells constantly

held a door open on valentines day in school for 100+ students going to lunch with colognes and perfumes amped up a bit, thought I was gonna flipping pass out and had to sit down for a minute
I actually got sick once when i was a kid, while i was at a perfume store with my mother. I was extremely overstimulated from the perfumes that i threw up. Partially lucky that we were at the cash register when it happened, because when the cashier lady saw i was trying to hold it in, she grabbed a little trash can from behind the table and handed it to me. I think my mom was embarrased that happened, but there really shouldn’t be anything else to do in that situation, other than check if your child is alright and leave as soon as you can so that doesn’t happen again, because this sickness was caused by the enviroment. The problem was, my mother only did half of that, she checked with me if i was ok, then proceeded to banter with the clerk lady, as if none of that happened. I come to find out later in life that my mom just doesn’t read the room well and may just be the only person that can actually worry too little in a serious situation. But still, if your child says they’re feeling sick and actually throws up, you should still check on them, becuase they could still be sick. And unfortunately, i was still in the area that made me sick, and she was taking such a long time, i actually started to feel sick again and just said screw it and waited outside, which at such a young age, it was my first time i purposly split from my mother in a public area. Lot of bad thing could’ve happened, and not one cross my mother’s mind. That is actually the second thing i learned about my mother, when my mother has something on her mind, nothing else takes over until she’s finished or it’s something that needs her full attention. As long as she actually sees it. Worse part is, she didn’t even aknowledge it for the rest of the day. It literally took until the next day ror her to bring it up. When i had pretty much forgotten about it. Which is the third thing about my mother, she claims to be so busy, she has some check list of things to do in her head that she does in order of which one came to her first. That’s at least what i think happens. I really don’t want to want to just dogpile on my mother, she is an actual good person, she just can be a bit thick-headed at times, but her heart’s still in the right place, though she can turn into the personification of a ‘karen’ when she doesn’t get her way at restaurants. (Well, except the asking for the manager part, she moreso just just really snarky and a bit bitchy when it happens, but mostly the same, really.) I apologize about for the ranting, i suppose i just had some issues of my past i needed to get out.

Oh yeah that place. There's a lot of smells going on in banff. I believe the Beaver Tail store does something similar. Can always smell sugar, cinnamon, and fried dough when you walk by

I actually explained this to one of my old bosses when I worked at a restaurant years ago. It's how I convinced them to make cinnamon rolls through our pizza oven, because people would come in, smell them being cooked, and would want to buy more food. Easiest raise I ever got at a job.
Theory Idea: Why does everything "taste like chicken?" as a default when we don't know what it is/where it came from? Edit: He made a video on it and I have now seen it! Very cool Matthew Patthew
My crack theory is that were so used eating to chicken and the fact that it has the most ordinary flavor unseasoned that it's the first thing we can think of
From my knowledge, Disney does the same trick in their amusement parks, where they pump the aroma from food places onto the alleys so they can attract more customers. Great episode (as always), Mat! Greetings from Poland!
I think it's fine to waft out smells if it's from what you're actually making, even if a bit heightened. However, it becomes disingenuous once you start using smells that aren't from your product. It's similar to using CGI in a food commercial, something which is explicitly against the law. You're presenting and something that isn't your product as what you're trying to sell.
That being said, in his analogy of using sony who tend to spray scents i dont really find that to be an issue. I mean its not like im going to equate oranges to a PS5, and thats such a legal toilet, because where do you stop, they would essentially have to ban using any sort of air freshener in commercial envoirnments for fear it could "trick humans into buying something" though i do agree that if you sell food as a product brand name IE dunkin or starbucks the smell should be on brand for your products available... Also those smells shouldnt be allowed outside of your stores zone. I am referring to the dunkin using scents on transport systems in Seoul, i get that its obvious that its a fake smell but at least for me i would find it extremely intrusive. It would be like if a mcdonalds employee stood at your front door constantly ringing the door bell with a big mac in their hand, at least thats how i see it since unlike with sight where i can simply ignore a billboard or sound where i can mute the TV or Radio i cannot just ignore the smell at least with out plugging my nose.

Being able to use gas chromatography and high pressure liquid chromatography have helped tremendously with mapping flavor chemicals and allowing for creation of better copies of natural flavors.
Even though I am a bundle of food allergies, I’m not really worried about artificial flavors. They often are molecularly identical to what we eat in our food or extremely close to it, so our bodies are likely to know how to handle it. The natural flavor is typically more complex and so does taste different, being a combination of flavor-related chemicals rather than just one of the ingredients. Vanillin, for example, although considered an artificial flavoring when it is synthesized by the manufacturer rather than extracted from the vanilla bean, is the major ingredient in the natural product vanilla (which has other minor ingredients contributing to the taste). I do think there should be more caution concerning artificial colorings, since they can be radically different from what our bodies evolved on. The Popsicle brand of popsicles introduced a line called Simply Popsicle which used very simple ingredients (also cane sugar instead of corn syrup - and yes. I can tell the difference and cane sugar is much tastier), including natural colors and flavorings from real foods. It really made a great difference - grape tasted like grape, orange like orange, etc. because the flavors really were from the fruits and there was no interference from non-food colors. Can’t find that line locally so maybe they discontinued it, but I found that their Paw Patrol-endorsed popsicles are actually the same things. Thanks, Paw Patrol! But the full line had more variety. There are other popsicle brands that use only the real fruit or natural flavors and colors, and the difference between those and the usual stuff is undeniable. But it’s nice to see that happening to such a ubiquitous brand as Popsicle.
Not really exposing; all this information can be found in one quick google search. But he did show this information to a wider audience who probably never would have googled it in the first place.
@@MV96_ Yeah farmers aren't slaves. You gotta pay people for the labor of producing, proccessing, transporting, storing, and inspecting your food. The only food you got a right to is the food you grow or hunt yourself. Otherwise you have to compensate those people who do produce the food for their labor.
You know, I do have a question to add to this. So with covid causing us to mask up when outside, I noticed a benefit recently where the mask can either hinder or eliminate smells (benefit to me because I can be sensitive to them). I mainly noticed this when someone who didn't wear a mask as often mentioned how some people we both interacted with that day clearly smelled alcoholic, while I never caught any scent. From there I did start noticing how face masks seemed to block scents (although not always getting rid of them 100%). So, with how long customers had to comply with mask mandates when entering businesses, could we find a decline in the aroma method's effectiveness in areas that required face masks?
I work for an auntie Anna's, I've seen this constantly. Every other customer comments about the smell. Another thing I notice is that when it's not busy, small spikes in activity will happen if a customer holds the door open for an extended period of time (outdoor mall), allowing the smell to escape and draw people in. We also don't use hoods, but I guarantee there's something in the food that heightens it's smell, cause something as basic as our almond granola (which otherwise would have no smell) mix has an insanely potent scent.
Auntie Anne's was such a core memory of mine when going to any mall as a kid. We could always smell it there and we would end up getting pretzels every time
The funny thing about the vents is they actually help with the smell situation, too, while also channeling the grease particles from fryers and such which really mess up ceilings and walls. Ever notice you can smell french fries within a mile of a McDonalds or donuts within blocks of a bakery? It's because the smell is piping out those vents. The ventless method would of course increase the smell inside the store and probably outside the front door, but it's a trade off. In a mall or airport situation, though, you'd definitely want the smell indoors.

I’d be curious to know how this affects people with allergies and whether any company has been sued for giving someone an allergic reaction based on their scents.
It's nearly impossible to have a histamine reaction to these sorts of things. They can dilute them into quantities as small as parts per trillion. Also, it's basically impossible to be allergic to a scent compound since they aren't proteins. The worst they can do is have minor interactions with existing proteins and you might get mild allergy like symptoms like watery eyes or a mild headache. There's no documented cases of anyone ever suffering anaphylaxis to a scent in the wild. It's always accompanied by some sort of protein allergen.
I am sensitive to scents so I stay away from candle aisles at stores and hold my breath during Christmas time when cinnamon is everywhere. I’m allergic to cinnamon and can get a headache from such a strong smell, but that is different than these scent dispensers, I suppose. I do have friends, though, that are even more sensitive than I am and get runny noses and headaches from walking into a store with any artificial or floral scent. You bring up an interesting point and it makes me curious if they are affected by these sorts of artificial scents, too.
That was extremely instructive. That's the kind of thing that makes me very glad that Food Theory was made real. Thanks a lot to Matpat and the rest of the team who worked just as hard to bring this to us.

I don't know if it's true, but while working at the Gap in the 90s, I was told that the store was maintained at a positive air pressure. This was to push the scent of the clothes (fabrics and dyes-Gap scent?!) out into the mall so as to induce shoppers to come in. There actually was a breeze flowing through the Gap's mall entrance that was not detectable at other clothes stores. In some other video he mentioned Subway is one of the cheapest fast food places to open up as a franchise owner. a mcdonalds costs like 2 million but bc subway has less equipment so they are much cheaper. probably why you see so many is bc revenue is much less in rural areas so the restaurants that survive are the cheaper to maintain ones. thats my theory lol

I worked at Subway in 2022 and I'd have to bake the bread more times than not. I would have to pull out the frozen bread 🥪 then put it onto a metal pan by 10 bread per tray. I'd also have to spray water on each bread then when they were unfreezing, they'd also be getting bigger cuz of the yeast. After getting them as big as I needed them to get before they would spoil and have to be thrown away which never happened on my shift. After putting them into the oven, their timer would be set over an hour and the oven would bake 100 bread.

@Darth Axolotl Oh, totally! The whole being disappointed by Coke now was just a little joke, I’m not that picky. I’m mostly a coffee drinker so I’d just go with whatever cola was the easiest/cheapest to get, which let me learn to like the different subtleties of each one. For example, I like Coke for its more lemony flavor over Pepsi's more caramel profile, unless I want something less tart and sweeter. RC stands out for not really standing out. As for the Kroger, it has a cherry/citrus finish, which is what I like most at the moment, but, I also kinda rotate as my tastes shift. I’ve always done this with all different flavors, since well before Matt’s video, but I also didn’t really bother to try store brands, so it was still really beneficial.

As a Panera employee, I can confirm the ovens are still used and then we also have an oven with the vents on the outside and when we start baking, the place gets warm and smells good 🙂 but the kitchen is under the vents so it spreads more through the place.
At Jimmy Johns, employees are encouraged to yell “FREE SMELLS!” when pulling bread out of the oven.
Former JJ employee. Managers told us to yell hot bread, and if customers were in to yell free smells
@@Hjhugj that makes sense free smells would achieve the same job of warning the employees but at the location i work at yelling hot bread tends to interest the customers almost as much (to be fair we have a really chill group of workers and customers) and sometimes when my managers shout hot bread i respond with " you tellin me it aint cool bread" and that tends to pull some laughs
I love JJ's energy more then their sandwiches. There sandwiches are good and worth their price, but the speed and energy of the place is why I like to go. Also buying day old bread.
man somehow i managed to develop a chocolate addiction and donut addiction when i was a kid
The worst part is when your sense of smell is really sensitive and the "nice perfume smell" actually gives you a horrendous migraine.
held a door open on valentines day in school for 100+ students going to lunch with colognes and perfumes amped up a bit, thought I was gonna flipping pass out and had to sit down for a minute
I can't do aerosol air fresheners for the same reason. It produces a cloying miasma that makes me feel like I'm choking along with that headache.
(Well, except the asking for the manager part, she moreso just just really snarky and a bit bitchy when it happens, but mostly the same, really.)
I apologize about for the ranting, i suppose i just had some issues of my past i needed to get out.

Great episode (as always), Mat! Greetings from Poland!
That’s what I exactly was thinking throughout the video
They don't just do it with food places from what I've heard. They do it pretty much anywhere to invoke a feeling, such as nostalgia.
Careful! Nobody talks about the mouse. He is always watching.
I hate the smell. I've been, and it was one of the worst experiences of my life.
DFB Guide talks about this on their TH-cam channel. They call it smellitizers I think.
I think it's fine to waft out smells if it's from what you're actually making, even if a bit heightened.
However, it becomes disingenuous once you start using smells that aren't from your product. It's similar to using CGI in a food commercial, something which is explicitly against the law. You're presenting and something that isn't your product as what you're trying to sell.
if we start banning calming smells at stores can we ban the music I hate hearing it and it actually irritates me.

I've ways been fascinated by artifical smells and tastes. The way they're able to replicate some very specific and even complex things is wild.
I can’t even comprehend the words you just said. Jesus Christ you’re smart

Actually that is a very good observations, with the mask mandate down, I guess I'm gonna go back to masks

Mad respect for Matthew’s truly loyal fans who got here early enough to see this

The talk about Panera had me thinking of Boudin's in San Fran. All that wonderful baking bread smell is directed to vents pointed at the sidewalk. It smells SO GOOD to just walk past the place, never mind that it's one of the best places to get real sourdough bread.
Oh yeah! My favorite place!
@@LadyOnikara mine too! Alway plan a meal there whenever I go to San Fran.
I was on a mission trip into San Francisco, and I walked past the Boudin only to find it was closed. My disappointment was immeasurable and my day was ruined.
_Matpat's helping those companies by making us imagine these smells, which emulates the effects actual smells have and also makes us hungrier and more susceptible to making impulsive purchases!_
I find it so funny how MatPat's real saltiness sometimes comes through, those are the moments that truly make my day. The relatable hate of shitty things that happen to us and all we can do about it is sit back and experience it.
“Companies are tricking you to buy more food through smell”
Me with a diminished sense of smell: “I am immune to your manipulation money man”
ME TOO :D
I have regular nose-bleeds, so it only works if my nose is right up on the dispenser.
Here’s a theory idea: whenever I’m driving through rural America on a road trip, I always tend to see a whole lot more subways in drive-through towns than any other fast food restaurant. Why is that? I bet there’s a really simple explanation, but I would love a theory about this
In some other video he mentioned Subway is one of the cheapest fast food places to open up as a franchise owner. a mcdonalds costs like 2 million but bc subway has less equipment so they are much cheaper. probably why you see so many is bc revenue is much less in rural areas so the restaurants that survive are the cheaper to maintain ones. thats my theory lol
The only reason someone would eat Subway is if there's basically no other restaurants around.
Yeah all small towns have a Subway and a Pizza Hut and i think the other commenters are right in that it is just they are cheap to operate
Both cheap and easy to maintain.
OK, let's say you DID become the host of Jeopardy!, how then, would you time the new schedule of filming between TV and YT?

Proboly less yt videos, but that don’t matter to me Bc He has wanted to be on jeopardy for so long
You're doing this wrong. You have to give him the answer then and he'll respond with the question.

Mat patt could probably convince me that cannibalism is actually legal through some loop hole at this point
I would assume the answer incentivizes people who’ve never tried Krispy Kreme to try Krispy Kreme. No shame to Dunkin lovers, btw

krispy kreme is good tho
@@cloudyskies55055 yes it is! 👍
I only had Krispy kreme once when I went to visit Florida because there’s none in Michigan and it was way better than dunkin and that’s coming from a guy who’s grown up on dunkin
I feel like there's a pun in your comment somewhere.
Theme parks been doing the scent thing for almost 50 years. I'd love to see a Disney/universal parks theory 😭 there's so much to talk about within it
Popcorn has earned its spot as a fundamental scent

I worked at Subway in 2022 and I'd have to bake the bread more times than not. I would have to pull out the frozen bread 🥪 then put it onto a metal pan by 10 bread per tray. I'd also have to spray water on each bread then when they were unfreezing, they'd also be getting bigger cuz of the yeast. After getting them as big as I needed them to get before they would spoil and have to be thrown away which never happened on my shift. After putting them into the oven, their timer would be set over an hour and the oven would bake 100 bread.
At first I was on the fence about Food Theory but know I can say proudly say that I have binged all the episodes and am craving more!

You talking about smells reminded me of how Disney parks waft out their real or artificial smells close to this to both sell things and make the ride environment more enjoyable. Great job on the vid MatPat.
Nearly spat out my store brand cola when he admitted to still buying Diet Coke, lol. I switched to the Kroger brand that won the bracket and now I'm disappointed when I have to settle for Coke.
Just a strange suggestion but have you thought about which you prefer rather than mats winner. If you prefer kroger buy kroger, if you prefer diet coke buy diet coke
Hi MattPat,
1. Disney World does a similar think with pumping out smells from their restaurants into their theme parks
2. I love your Joey meme. Can you please do a video on Style Theory that focuses on the fashion of Friends characters specifically Rachel?
"Smell makes you buy the food more"
Oh yeah, this is science time.
I really want his roommate to watch these videos and go...
"DUDE! I said I was SORRY about the microwave!"

Matt I gotta tell ya. That's the EXACT thing my dormmate did to us down to the 30 minutes instead of 3. Horrific
Hey MatPat, I work at Vanderbilt University Medical Center in the Imaging corporate office. This video inspired me to look into how scents and aromas can benefit patients undergoing Medical Imaging. We're now implementing this study in one of our Imaging centers

I just realized I don't remember going to a Dunkin Donuts that smelled like donut, only coffee. It seems to work, because I haven't bought anything other than ice cream from a Dunkin Donuts in years.
I work at Dun,in Donuts 🍩 as maintenance cleaner & I absolutely love it it’s a good paying job the co-workers & staff it’s only 23 minutes away from my apartment via walking distance & & the coffee is the best.
thats because we dont actually make any donuts in store unless we absolutely have to!
@@marymajors5838 Wait, where do you get your donuts from then?

The saliva in my mouth: *Whomst has summoned the almighty one?*
I gotta say that smell being able to bring us back in time is way too real. I was in the hospital for 6 months and sometimes when I smell something chemical I get brought back to those months where I just felt horrible.
Theory idea: does something free/made by yourself actually improve the taste? I thought of this when eating a late dinner lol
Joshua Weissman and Binging with Babish want to know your location.
This video explains my wanderlust especially at malls, I just love going to malls just to walk around and loiter, and the unexplained satisfaction of doing so, is now unraveled its the underlying scent that draws me in, still cant put a finger on what the scents are, but maybe its a conglomerate of all the scents from the shops in the mall
my mom bought the scent air perfume thing and they had “hotel scents” and people always tell me my house smells good
Imagine... Living near a bread factory... It smells really good almost all the time
That's a bonus ig, unless you hate the smell of bread
