    Tried this today. May not be 100% authentic if some of the other comments are to be believed, but it was excellent nonetheless.
    Make sure you char the onion and pancetta, and take some time to reduce the sauce once you've added the fresh tomatoes for a more intense flavour. Careful with the salt because of the pancetta and Parmigianino/Pecorino.

      It's because everyone dumped Mario a few years ago because of the multiple allegations. Then he divested to get out of the hot water. I remember Mario on foodtv in his orange clogs, and depth of knowledge. He's doesn't take the beauty and simplicity of Italian food culture lightly. This looks like a great New York-nuanced version of a great dish, in spite of the 'crying italians' commenting. Miss Mario. Too bad he/they can't make a thousand more videos produced exactly like this. Wordless. Gorgeous.

    Long ago I cooked onions,bacon and tomato sauce together with spagetti for the roommates as a cheap meal after tuition and all was paid. If I had known,I'd be calling it an Italian name and charging 25 bucks a plate like at Batalis restaurant. 😂

      Yes! Exactly! This dude probably had some good shit from Italy you can get online. Regular store bought tomato paste would work, but if you have guanciale, there’s no reason why you wouldn’t order it and have it before you make everything.

      +stefano passa Mario Batali's family is from Abruzzo. In addition, I've seen Italian chefs use onion as well. Doesn't make it correct, but I've seen it.

    Need to clarify; do NOT use bacon - the taste will be all wrong due to the smoke flavor. Use cubed guanciale (cured pork jowl) if you can find it, or porchetta (cured pork belly) otherwise. Also, please do NOT add more than a teaspoon of olive oil (better if none), since the guanciale (or porchetta) has more than enough oil if you give it time to render out (over MEDIUM or LOW heat). Onion? Ok... Garlic butter sauteed mushroom slices might be okay too.
    But I've gotta say... Excellent cinematography and pleasantly missing the distraction of commentary. Pure food porn. Now I'm compelled to go make some. Buon appetito!

    This isn't an authentic recipe.. but it sure is freaking delicious. Real amatriciana has white wine and omits the tomato paste and onions. This dish is however very clean tasting with a bold tomato flavor and concentrated flavour of the fatty pork. Put some parmigiana in the sauce (although pecorino is ideal) and it's A+. My Italian boyfriend really likes it and says it's my favorite pasta I've made.

    Great video and interpretation of bucatini A'matriciana. Very helpful insights. But, when you look at the written recipe it calls for 12 ounces, 3/4 pound of guanciale. In the video far less is used. And, no where near that amount is used in any other recipe. Something must be wrong. Thoughts?

      This was 1 serving be prepared, so 1/4lb of pasta. The guanciale was scaled down accordingly.

    The original Amatriciana recipe is made of a few simple but fundamental ingredients. This recipe was recently protected by the Municipality of Amatrice with a brand of origin.
    Ingredients
    Spaghetti,Bucatini : 400 grams
    Pillow (Amatrice) : 100 grams
    Pecorino di Amatrice : 75 grams
    San Marzano tomato : 350 grams
    Extra virgin olive oil : 1 tbsp
    Dry White Wine : 50 ml
    Salt, Pepper : qb
    Hot pepper : 1

      No actually, it ruined the recipe. Real amatriciana shouldnt rely on strong aromatics. Its one of those dishes that relies on simplicity, in this case only of tomatoes, guanciale, red pepper, and cheese.

      Shut up lol, there are chefs in Italy doing this recipe with many more twists. Onion is a great addition and you have no reason not to include it other than "tradition" ( like every household doesn't put it's own twist ).
