  • Ginger is one of the most important ingredients for Chinese cooking. They sometimes sell it in a bag, which has many pieces inside. So what are the best ways the store ginger?

    1. Store whole ginger in a Ziploc bag in the fridge’s crisper drawer.
    First, wipe the ginger with a paper towel. Then place it in a Ziploc bag. You could also today’s date on it. Store in the fridge, inside the crisper. This will stay fresh for 1 to 2 months.
    2. Freeze peeled, sliced, or minced ginger in the freezer.
    First, peel, and slice the ginger (you can also mince it). Place the ginger slices in a Ziploc bag. It’s also good to write today’s date on it. When you use it, just take the out the pieces that you need, and use them in stir-fry or soup. It will stay fresh for up to 6 months.
    3. Store peeled, sliced ginger in a jar of vodka in the fridge.
    Place peel and sliced ginger in a jar. Then pour vodka in it to fill everything up. (You can also use other alcohol that has at least 40% alcohol concentration.) When you use it, you can just take out the portion that you need and use it in stir-fry or soup. The ginger will contain the taste of alcohol, but the texture will stay nice and firm. It will stay fresh for 1 to 2 months.
    4. Make pickled ginger.
    Ingredients:
    6 ounces ginger, peeled, sliced
    1 tablespoon dried red chili peppers, washed with cooked water
    1 tablespoon Sichuan peppercorns, washed with cooked water
    1 star anise, washed with cooked water
    1/3 teaspoon salt, no iodize
    1 teaspoon sugar
    2 tablespoons rice wine
    1 cup water, cooked, room temperature
    In a jar (I’ve already sanitized with boiling water.), add in the ginger slices, dried red chili peppers, Sichuan peppercorns, star anise, salt, sugar, and rice wine. Pour in the cooked room temperature water. Stir with a pair of sanitized chopsticks. Cover the jar.
    Put it, under the shade, under room temperature for the next 5 to 10 days. Then put it in the fridge. You can eat it like a side dish. It will stay fresh for up to 3 months.

    I personally think this is yet the best video for storing ginger which works for Chinese/asian cooking... there’s a lot of similar videos out there but sometimes they ONLY use alcohol or make candied ginger! I love how with the first and second method it is super easy and simple. The final one which makes a side dish on its own is really aspiring and very unique!! 🤩

      Or you could just buy a small piece as you need it, and not have to worry about storing it.

    I use two methods. One is to just pop it in a ziplock bag and put the bag in the crisper drawer in the refrigerator. That keeps it for a few weeks, but it will begin to mold at the exposed surface from the previous cut. The second method is to peel and slice the root as you have shown. Then lay the slices on wax paper in the freezer in a single layer. That way they will not freeze together into a clump. After a few hours or over night, put the slices in a ziplock bag and keep in the freezer.

      I once froze my ginger whole but the texture was kind of mushy and the flavor was not very potent after I thawed it for use. Do you notice this issue with ginger?

      @@Christina-pq7kn Agreed. Freezing it whole does make it mush. Thin slices freeze better because they don't trap the water inside anywhere near as much as in a whole chunk of root. In the whole root it expands as it freezes and breaks down the cell walls. It happens in the slices, but there is more surface area exposed so there is less damage during freezing. Fresh is always best, but I hate to let any go to waste.

    Really good video Ci Ci.
    I use the freeze method (but I also “cheat” with dried Ginger - I know, I know, it’s not as potent (this way/form) but it’s better than nothing, in a pinch).
    Lastly, I would also suggest you consider “Vacuum” packing, as it pull’s all the Air out of a package (or Jar). And as you may know, with the absence of air, things last longer (especially if you vacuum AND freeze - when you do both, then it reduces “Freezer Burn” significantly. This last method is especially good with Meats 🥩).
    That is my 2 Cents 😉👍

    Thank you Cici for sending me your video on how to store ginger. - I will try these methods and let you know which ones worked for me. I make homemade Chia spiced tea every 2 days. It has dried ginger as one of the many spices but I must have a slice of fresh ginger also! 🙏

      I would also like to know about the Turmeric. It is difficult to get sometimes here in Western Canada and it is often pretty expensive as well. So would be nice to be able to buy it on sale and keep it useable for an extended period.

    can the alcohol mess us up. not sure how to ask this. but i take medication and i see a lot of storage processing uses the alcohol, can this affect us, does it make you tipsy

    Haven't done this but I read a lot of people peel a clump then take out & grate what you need and pop the peeled clump back in freezer.

      Frozen whole ginger gets very mushy and it's difficult to grate. I think I'll try the thin sliced then frozen method.

      The texture of ginger will change slightly once thawed. So when you use it, you can use it in soup, stir-fry, or stew directly without defrosting it.

      I freeze my ginger as well. I remove the ginger about ten minutes before I am due to use it. Cut it while it is still fairly hard. In this way the liquid from the ginger will not ooze out. Use it immediately. It tastes exactly like fresh ginger.

      frozen would give you finer finished product. Plus would be easier to hold and work with. I'd suggest freezing in bigger pieces for grating, which would make it easy frozen or thawed.

    I let the ginger dry in a dry dark place. It will get very hard, but wen you need ginger flavor you can grate the dried ginger into your cooking.

    I have been storing ginger in a glass container filled with cold water and then refrigerate it and it last for 1-2 month.

    Grest video! Couldn't you akso put the Vodka filled jar in the Freezer so it can store longer? Vodka and alcohol generally doesn't freeze I.beleive.

    When I put in a ziplock bag it molded 🍄🎭🤷🏼‍♀️ I’ll try it again.
