I never understood why Blue runners get such a bad rap. Many of the jack species are amazing eating, of which, the blue runner is far from the least. Your paring of the crunchy battered fish with the sweet and spicy salsa and fresh veg looked amazing and I’m certain that it tasted even better than it looked based on the reactions of Aaron and Madeline. You prove over and over again that great food doesn’t have to be complicated and can be made from the simplest of ingredients. Thank you for sharing and we are anxiously waiting on next week’s episode.

When I saw you adding the scotch bonnet, I thought it would be way too hot. I used to have a few scotch bonnet plants and they were fire. It was always an unpleasant experience when I tried cooking with them. I'm guessing the pineapple and apple cider vinegar helped tame the heat from the SB. That dish looked amazing with all the tropical colors!
