I was inspired by your grouper head tamales and went and emulated that recipe with some heads and racks from my local red snapper charter boats. Kinda felt like a pelican sitting around the fish house waiting for my scraps. Tamales recipe, hot sauce and all was incredible. thanks!

I live on the shore of Lake Ontario...all freshwater. But you inspired us to go out and set our crayfish traps....no salt water around...but we get some big crayfish. I'm from englewood florida. M didn't know we have lobsters. Spiny not so much but Spanish I was told are definitely around. And was told they taste better. That was 2 months ago. But wasn't told it's night time dive
