    Thank you for this. The Nordic Cookbook is my favourite book and I can't wait to dive into the Baking Book. Magnus is as natural a teacher as he is a chef. Truly, he is doing all that one man can, to preserve his traditions for the next generation and beyond.

    I like NORSE DNA, NORSE THOUGHTS, NORSE BREAD ( aka mooooo lahhhhhh) RESPECT from CANADA. Nice to see you being creative chef. WHY CANADA cannot have NORSE beef but our aisles are filled with bad salt ( aka soya sauce)?

    how is he going to make such an assumption that nordic baking is the most diverse in the world..sorry magnus but China or even the ppl of south america is so much more diverse thus meaning their baking culture is more varied...

      i dont know, i dont think you can prova that, any more than he can prove the nordics is more diverse

      He literally adressed this point in the beginning and (he) defined manly in two ways: greater distance to recipes by scarce population, and more varied grains used across the region in baking. The French example was the antithesis in standardised recipes and grain. He is defining diversity differently than you are interpreting it.
