  • Magnus Nilsson stops by the Googleplex for a talk with Executive Chef Jeff Freburg. Nilsson is the head chef of Fäviken Magasinet restaurant in Jamtland, in a remote part of Northern Sweden. He worked at three Michelin star L'Astrance in Paris before joining Fäviken in 2008. It is now ranked one of the 50 Best Restaurants in the World, and has become a legendary culinary destination.     I recently dined at Faviken and it was simply one of the most magical pure experiences I have ever had while dining.
    He's signature dish, the scallop, is hauntingly amazing.

    I loved seeing Magnus last year presenting his vision for Faviken and I love the book. How he is able to be so localy and sustainably conscious is amazing and admirable.

    Magnus is a truly inspirational chef. His laid back, yet precise persona is emulated into his work on the plate. I hope to have the honor of dining in his restaurant one day.

    26:18. To me, the kitchen of the future will be less style more functional: PID controlled (sous vid) for any operation (boiling, roasting, toasting) robotic arm assisted (most recipies are just adding things at various times, e.g. Add butter after cooked) meets a dispensing machine for extracted spices and staples (rice/oat) that's fed by drone via amazon like sourcing and various scheduling.
