Ingredients required for making cauliflower potato curry - Serves 6 to 7
* 580 gm (after chopping) / 1 large cauliflower
* 470 gm potatoes (3 large)
* 2 large pods of garlic (1 teaspoon finely grated)
* 1 teaspoon finely grated ginger
* 150 gm/ 1 large onion
* 3 small bay leaves
* 1 dry red chilli (optional)
* 1 large tomato
* 1 teaspoon panch phoron (can use cumin seeds instead)
How To Make Panch Phoron - • How to make PANCH PHOR...
* 1/4 th teaspoon hing (asafoetida) (optional)
* 1 + 1/4th teaspoon turmeric powder (haldi)
* 2 teaspoons Kashmiri chilli powder. Please adjust proportion according to your preference.
* 2 teaspoon ground coriander (dhania powder)
* 1 teaspoon garam masala powder
How to make garam masala powder - • 3 MUST HAVE HOMEMADE I...
* salt as per taste
* 1 teaspoon sugar (optional)
* freshly ground black pepper
* About a cup of hot water
* 1/4 th cup frozen/fresh green peas
* chopped coriander leaves or any greens of your choice
* 1 teaspoon ghee. Homemade Ghee - • HOW TO MAKE GHEE AT HO...
* 4 to 5 tablespoons oil. Please adjust proportion according to your preference
Method -
* make a spice paste. In a bowl add turmeric powder, Kashmiri chilli powder, ground and 4 tablespoons of water. Mix and your spice paste is ready.
* Heat oil over medium heat. Add cauliflower along with turmeric and sprinkle of salt. Fry the cauliflower on medium high heat till it get slightly browned up. Taking them out into a bowl.
*Added another 2 to 3 tablespoons of oil to the pan on medium heat. Once the oil gets hot add dry bay leaves, dry red chilli and Bengali five spice that is panch phoron. Fry the seeds on medium low heat till they start to splutter.
* Add pinch of hing and sliced onions. Fry onions on medium heat till they get a slight brown color around the edges.
* add the potatoes and fry till they get little browned up
* add the grated ginger and garlic and spice paste, and freshly ground black pepper. Stir for a minute
* add chopped tomatoes and salt and fry for 2 to 3 mins
* Add about a third of a cup of hot water and cover it for 2 to 3 minutes.
* After 2 minutes add the fried cauliflower, a teaspoon of garam masala powder. As everything was looking dry I added another half a cup of hot water.
* cover on low heat for 8 minutes or until the cauliflower and potatoes turn soft.
* In between add frozen green peas and little chopped coriander leaves
* After the veggies turn soft add ghee and chopped coriander leaves
Serve this with rice/roti/paratha or any flatbread

I just finished chopping, rinsing, and prepping a head of cauliflower to make this dish tonight! I'm only using a portion of that cauliflower though. It takes SO LONG to chop, rinse, check for bugs, etc. Super clean one this time! Excited for cauliflower curry later! I'm going to have a side salad and a side of beef soup to go with this that I had leftover from what I made the other day!

I explained I wanted to try a new recipe and off I went. Bumbi, this is an awesome recipe! I ate more than one portion and was happy all evening. You’ve made me a cauliflower fan.
I think it is your method of dry frying the cauliflower until it gets brown bits, removing it from heat, and then putting back into the pan with a bit of liquid and cooking until tender. It is delicious and my husband liked it too, which means I will make this often. Thank you for such a great recipe.

I learned something new, I had never heard of Panch Phoron before - I a saw Cumin, Fennel, are those mustard seeds and nigella maybe? I will be making this today, but maybe I omit the Panch Phoron since I don't have that.

Just thought,can l use part boiled potatoes to speed up the time,or would that take away some of that great flavour❤.
It will taste best if you use raw potatoes

In the last step, (3:33) the cooking of the potatoes and cauliflower took about 25 mins to get it soft, not 8 minutes as suggested in the video. It smells so good!

Will try out this recipe. However, one may tone down both the number and quantity of the spices being used, so as to try and retain some of the native flavor of the vegetables! Indian food is not about drowning it with powdered spices!
I think you are new to my channel. I have quite a number of recipes on cauliflower, and there is also one where I used only turmeric and chilli powder. Hope you read the title , it is “ aloo gobi MASALA” , and I think I used only the basic masalas, trying my best to keep it simple though the title states it to be a “masala” one!!!! Regarding the quantity of spice powders, do you know the quantity of cauliflower and potatoes used ???? And if you really want to see a simple one here you go or probably you can share your own recipe here of making a gobi “MASALA” without any spices -

I heard asoefetida has a weird smell, is that true? I've never seen it in the grocery, is there an alternative I can use that is similar to the taste? I just bought more turmeric, chili powder, whole coriander seed, ground coriander seed, and cinnamon sticks so that I can keep making your recipes! I will see if they have the Bengali Five Spice at the one grocery I go to or see if I can find an Indian market that takes EBT/Food Stamps. I'll have to use turnips instead of potato because I can't have starchy foods but looking forward to this! I already have plans for getting cauliflower also even prior to this so great timing!
Hing does have a strong smell, but you need to use just a pinch and after getting cooked it brings in a beautiful flavor to a curry. It is optional so no worries if you do not get it. If you find it, try buying in powdered form as the solid form may be bit hard to manage for beginners.
Regarding panch phoron, I never buy it but make it at home. Here is the recipe --

Bumbi, I don’t like buying tomatoes in winter, I have home canned tomato sauce (passata) I’d like to use instead. How much should I use in place of one tomato?

This is exactly the way I cook - and why all my friends hate me. I dish up really nice food, and when asked "Whats the recipie"? I answer "What recipie"?... you just make it up as you go along. No way you can remember what you did.... as long as you have everything on the shelf... just cook. Its nice, or its not. Sugar? Sure, go for it. Basically - once you're of a certain level of cook - just ad-lib.

I have tried a Jain recipe or two and while good they seemed to lack depth of flavor (subtle complexity) and a degree of umami. It just seemed like something was missing when garlic and especially onion wasn't in the curry.
