Just made this. I changed it a bit by pureeing the mushrooms, using a dry white wine, because that is what we had. And cooked it down a bit more to make extra thick & creamy. Oh & I left out the carrots so it wouldn't be so sweet. Great recipe foundation to work with. Thank you!!

You can use potato starch or a instant potato mashed product to thicken it. I just don't know their quality. But that might also mean you need to use less broth so you don't loose the mushroom flavor.

Likely not because otherwise you would not have made your comment. You also have a limited understanding of what you think is beneficial about mushrooms. You are talking about commercial mushrooms and you think there’s beneficial bacteria on a commercial product? I also expect that I’m much older than you (your misguided reference to Mac and cheese and hot dogs gave it away) and have cooked thousands of the things, there is no altered texture or taste.
@ A little more chemistry understanding is necessary. The term caramelize is applied to things that contain starch (onions, garlic) which is then converted to sugar by the application of heat. Mushrooms don’t form sugars. Washing mushrooms with water does nothing to prevent them from browning when you fry them. Try it sometime.
Instead of adding flour, it's better to reduce down the liquid and then add milk and cream and an egg yolk to thicken slightly. People also don't use ounces any more, but other than that the puff pastry idea is a good idea.
I like just a tiny earthly flavor of dirt on my mushrooms, never have I washed them in 20+ years 😅. I do add about 1/2 of cup of sweet Marsala and reduce prior to adding flour and rooster broth 😊
Adding black pepper in the beginning of cooking only make the soup bitter, always add black pepper at the end of cooking and the Salt should have been added wit the mushrooms!
Can I ask a question for anyone who knows. In my 60 plus years I have never consumed alcohol. So I have literally no experience with it. I have consumed food that was cooked with it because I know the alcohol is burned off. In the past I encounter recipes that call for alcohol. And it drives me crazy because I can never find it. Whole Foods does not carry Dry Sherry. They told me to go to a liquor store. And I thought would surely work. Well they had Sherry. But not a single bottle said ‘dry’ sherry! The clerk had no clue what dry Sherry is. Maddening!!! So I googled what I can use in place of dry sherry in a recipe and Madeira. So that is what I bought. I have no idea if this will ruin this recipe or not. Incidentally, none of the bottles of Sherry were identified as wet either. What is the term ‘dry’ supposed to designate it from. Plus it is red and the sherry used in the video was white.

There's a reason why certain cooking recipes require you to not wash them. Water keeps them from caramelizing, which gives them distinctive flavour
