Hi Alycia, I have a friend who can’t have dairy . Do you think the beef protein would work for her if I use it instead of the whey isolate or even the oat fiber? Thanks
Just made it. Went cupcake route. Gas oven. Did not use convection. I got 17 cupcakes and it took about 22 minutes. FYI, I ended up with twice the frosting I needed and I was liberal with it. Probably makes a difference being I made cupcakes. Hard to pile so much on a cupcake. Probably could have gotten by with half as much heavy cream. Delicious though. Freezing half for the holidays. Alycia- does the whey protein have to have lecithin in it? I’ve found some with it (soy or sunflower, I would prefer sunflower) and some without. If it’s without, would I have to add anything else to it for this recipe? Thanks!

Can I use egg white protein in place of the whey protein isolate? (I have egg white, and the isolate is so expensive for a few baked goods). Thanks for your informative videos!
I've found that it works as a swap in crispy baked goods but not very good in fluffy baked goods. Recently the price has dropped for isopure and it's similarly priced per ounce to egg white protein now. And all of my baked goods use it, so you have a lot of recipes you can use it for. Yeah dressing is hard, I tried using my bread for it and it just wasn't up to my standards at all. Didn't even save the leftovers, the texture as too off.
You may want to consider the recipe for Dream Biscuits (see Highfalutin' Low Carb - Viral Flour from ATK? - video. They would make great dressing, and they make the best rolls (according to my hubby, who has to test everything I make!) I made them with Victoria's flour). Wes even featured Alycia on one of his videos - my fave keto people on YT!

have You considered making a blend of the 'flour' type stuff You use to stream line recipes?? Does every type of baked good use same balance of ingredients? No? Just trying to figure out if I could try to use like Cook with Mel's or Victoria's keto flour blend & make this cake... I would like to know this as well. It would make baking so much faster! I like that these recipes don't use almond flour as I don't like the grainy texture unless I'm making cornbread. Thanks for all of your great recipes!
@@JenFine223 Allulose will make things brown/burn on top quicker, plus for cookies etc, you really want the body erythritol gives. Although for creamy things, allulose gives a better texture. A/M isn't as sweet as E/M tho, so you may have to add more to taste
okay - I made this yesterday. Mine came out dense, heavy, not fluffy at all lol. Tastes good, but not super delish like yours. Not sure what I did wrong as I made it while replaying your video and did not overbake it. ugh will try again later this week.
Weird, did you weigh and use all the same brands as me? Other than that just making sure the butter and sweetener is whipped well. I hope it comes out better next time!
I don't use xylitol in baked goods because it is higher on the glycemic index but I think you can swap the erythritol with xylitol but I'm not positive. Allulose I use for specific applications like custards and recipes that need sugar syrup because it makes things like cookies not bake right and fall apart and breads and cakes wet if you use too much.
Have you tried kings Hawaiian rolls? I’ve been debating if I should risk the Natural flavors (maltrodextrin) in pineapple extract or just use a few tablespoons of pineapple juice - I’ll peek around your videos and see if I can glint any inspiration 😂 thank tou
I've never look into it but Google said there isn't actual pineapple juice in kings Hawaii rolls. But many use it to get the sweet flavor in homemade rolls. So using extract probably won't give the same effect. I may just use a tiny bit of allulose on top of the sweetener that is already in the dough. You're welcome.
