So glad to find this recipe! I'm going to add a layer of sugar free chocolate chips before adding the pecans. A friend made a Chocolate Bourbon Pecan Pie for me once and it was awesome! I'm interested in the Keto Corn Syrup, especially, because I want to try to make Keto Divinity, which is my hubby's favorite candy!

In my former life...pre-keto.....I blind baked my shells about 10 minutes for pecan and pumpkin pie and I also cooked the filling slightly on the cook top. Especially now with the keto ingredients this technique works very well. I will definitely try it with this recipe and let you know....if you're interested. Love all your recipes I've tried. I'd like to know how it works but I wouldn't personally cook the erythritol as I've had horrible experience with it crystallizing. But I made my pecan pie bars that way, just trickier with tempering eggs. I wanted a semi easier way to do it, lol.

I love how you take the time and experimentation to balance both taste and texture with keto baked goods. Many others simply dump in erythritol to swap out sugar and end up with a grainy, crystalized mixture. Similarly, how almond flour may make "pretty" crust; the taste and texture with your mix of dry ingredients is superb! Thank you!

I just made this recipe and decided to put a piece of foil on top from beginning to end of recommended cooking time the crust turned out golden and I feel it’s perfect no scorching at all .
For years I have baked all my pies (pecan, lemon meringue, apple, cherry, quiches, etc.) on a preheated pizza stone. It sets the bottom crust quickly and greatly reduces soggy bottoms. It also reduces overall bake time AND now that I am KETO, reduced baking times greatly help the overbrowning effect of allulose.

There is a product called Yaćon syrup. It’s made from a yam or something. It’s black like molasses, similar taste, NO CARBS! I use it in all sorts of keto goods, including keto baked beans. (Only bean is black soybeans which is 1 net carbs or so per serving). Also, for fruit pies and bread I like to use kabocha flour. It’s very very low net carbs and a lovely flavor. Japenese pumpkin. It’s the squash BochaSweet is made from

Would you use the same amount of bottle allulose syrup as homemade? Yours is much thicker than bottled.
I think I put in the video to cook it a bit but make sure you use more than 1 cup because it will reduce by volume when you cook it.

I mix the pie crusts in my Ninja. So fast, and doesn’t get touched so it stays ice cold and flaky.
That is a good way to go too. I just don't like pulling out big equipment for videos since I don't have a ton of space to shoot.
What can you swap for Dairy free? Can't do whey protein isolate.
I put it in the video. You can swap egg white protein for the whey but it makes a drier and tougher crust in my opinion.
