I've watched a few of these videos now and feel confident in giving you this guide, which happily applies to nearly all foods: if it looks uniform and/or processed, it's the cheaper one.
While you are correct, I like how in these the expert explains much more than just the basic things that separate the two products, so even when it's completely obvious they give you a lot more info than that.
This series has definitely become one of my all time favourites. Even if you’re watching an episode about something you aren’t a huge fan of, you enjoy listening to what they have to say. It’s the true passion for their craft, that is truly memorizing !!

I'd say it works well for them! we grow and protect the plants, make sure they reproduce and aren't destroyed by bugs and droughts, as a species they're quite secure I'd guess
capsaicin is actually probably used to defend against fungus. Peppers that grow in hotter warmer climates tend to have a lot more of it. If it was to deter humans/mammals from eating them too early, you would expect the capsaicin to be highest in the beginning of the pepper's life, but that isn't what happens.
+Christopher Lee Ice cream also contains casein, since it's made of dairy products, so it works just as well as milk if not better. It's very cold so it's also a huge relief against the burning sensation.
In regards to the blurring at 3:50, look at the sauce on the right. Skip 10 seconds to 4:04 and notice how there is more sauce inside. Clearly, the small segment around 3:50 was taken AFTER he already predicted the prices correctly but the editors thought it would be better to put that bit in before the reveal. He talks about the smell/aromas which is pretty important information. So to all the people wondering, and specifically the haters saying "it's all a conspiracy", pay attention to details before making a fuss or embarrassing yourself in the comment section. It's just how the edited the video.

I'm pretty certain the "B" Asian hot sauce is Dawson's Heatonist #1. It's a Sichuan ghost pepper sauce, and both his description and the price is spot on for it. One of my favorites!!!
Regarding the "reveal" at 3:50 I'm guessing they needed to retake a certain portion of his analysis after the fact, and just forgot to put the cards back on. None of these videos are in one take, folks.
It kind of just gives the idea that he's not using his knowledge and senses to really determine the higher quality product. If the prices are revealed, it suggests he's already looked at them, therefore giving confirmation bias towards the pricier sauce and relating to this knowledge

At first I was all like come on. Now you're milking this series. But this was genuinely interesting and super fun to watch. I'm so naive when it comes to this type of stuff. So many factors to take into consideration and lots of insight that he gave. Really amazing job.

that being said most sommeliers i've seen say that while you CAN tell the difference between common and expensive wine, what makes wine "good" IS subjective, and there's really nothing objectively "better" about more expensive wine, it's just more expensive/exclusive to produce! And they generally just say: hey, drink what YOU like.

You only have around 250 master sommeliers in the world but these people can identify (within a tiny margin of error) the region and the year of the wine. There are obviously a lot of wine snobs but don't discredit these people without knowing what they are capable of
A is probably right but B is likely Reaper Squeezins. Last Dab has a different color to it and doesn’t have a pure distinct Reaper pepper flavor as described here.

Always intrigued by these videos. I love listening to experts in their area talking about what they know. It's educational and it comes from them being so passionate and therefore knowledgeable about their field.
If The B vinegar sauce is Tabasco, the salt he picked up on is from the fermentation process, they store the pepper mash in old jack Daniels whiskey barrels, and are then covered with a cap of salt from the salt domes around Avery island. The salt cap forms a one way valve allowing gasses to escape from the fermenting peppers, but not allowing oxygen in.

Funny thing is there is a water sommelier in Germany who owns/operates a water bar. As in, you can try different types of water at varying price points. He seemed like a pretty legit and cool guy. He did say that at the end of the day, water is water and you can drink whatever you want to quench your thirst.

I'd imagine it be a similar sort of situation as it is with wine, i.e. you can't really tell the difference. Sure, you can tell the difference between watered down crap like Budweiser, but once you get into actual real beer, it would be very difficult to guess the price just based on taste, since beer (like wine) is super complex and taste is subjective.

I think if they showed brands it might look like he was biased towards certain brands, like an advertisement. By removing all the labels they keep their integrity.
I think the point of all these videos is to give you a foundation of things to look for so you can make your own judgments in the future. I don't want one person to say "I like this sauce, cheese, coffee, whatever more than this one", I want to know what I should expect at different price points. There are literally thousands of hot sauces out there, we all have different taste buds. In short, I'm glad they don't show labels.

That means that when he was talking about the aroma of the sauces the prices were already revealed. It happens on TV and on TH-cam too, the reactions are fake and out of order, he's talking about it after he saw the prices. What a shame, it made me doubt the whole show.
@@jprg1966 actually, that's somehow right, I can imagine them asking him question about the sauce afterwards and then editing it in a way that makes it looks like the way it does. The only thing that worries me is that once the sauce gets opened and tasted the top of the bottle got "stained" and the moment the labels are open and he's talking about the aroma the bottle is clean at the top which actually makes me think it wasn't a reshoot it was the fact that beforehand the price was exposed and then covered. I might be wrong BTW.

Best thing to do is to just open your mouth and let the saliva drip out. This is especially true for oil based hot sauce as it'll coat your tongue and stay there. Milk helps but since the sauce is on the tongue, it's best to just let it drip out with the saliva. You can also use your teeth to scrape it and spit it out as well.
Fun thing: New research suggests that capsaicin developed as a method of preventing fungal infection primarily, and the whole mammals get burnt by it thing is kind of just a nice side benefit.

That's an unsubstantiated myth, actually. Real Wine Experts, aka Sommeliers, most definitely *can* tell the difference between a quality wine and a more common variety wine.

that being said most sommeliers i've seen say that while you CAN tell the difference between common and expensive wine, what makes wine "good" IS subjective, and there's really nothing objectively "better" about more expensive wine, it's just more expensive/exclusive to produce! And they generally just say: hey, drink what YOU like.

You only have around 250 master sommeliers in the world but these people can identify (within a tiny margin of error) the region and the year of the wine. Always intrigued by these videos. I love listening to experts in their area talking about what they know. It's educational and it comes from them being so passionate and therefore knowledgeable about their field.
If The B vinegar sauce is Tabasco, the salt he picked up on is from the fermentation process, they store the pepper mash in old jack Daniels whiskey barrels, and are then covered with a cap of salt from the salt domes around Avery island. The salt cap forms a one way valve allowing gasses to escape from the fermenting peppers, but not allowing oxygen in.

Funny thing is there is a water sommelier in Germany who owns/operates a water bar. As in, you can try different types of water at varying price points. He seemed like a pretty legit and cool guy. He did say that at the end of the day, water is water and you can drink whatever you want to quench your thirst.

I'd imagine it be a similar sort of situation as it is with wine, i.e. you can't really tell the difference. Sure, you can tell the difference between watered down crap like Budweiser, but once you get into actual real beer, it would be very difficult to guess the price just based on taste, since beer (like wine) is super complex and taste is subjective.

I think if they showed brands it might look like he was biased towards certain brands, like an advertisement. By removing all the labels they keep their integrity.

I think the point of all these videos is to give you a foundation of things to look for so you can make your own judgments in the future. I don't want one person to say "I like this sauce, cheese, coffee, whatever more than this one", I want to know what I should expect at different price points. There are literally thousands of hot sauces out there, we all have different taste buds. In short, I'm glad they don't show labels.
I used the info on this video to pick sauces that have the chili peppers at the top of the ingredients list. Avoided the water sauces.

Yes, if you look closely, the A and B signs are on the counter next to them. Maybe he pulled them off too early or they needed to refilm his reaction after he had revealed the prices?
That means that when he was talking about the aroma of the sauces the prices were already revealed. It happens on TV and on TH-cam too, the reactions are fake and out of order, he's talking about it after he saw the prices.
What a shame, it made me doubt the whole show.

@@jprg1966 actually, that's somehow right, I can imagine them asking him question about the sauce afterwards and then editing it in a way that makes it looks like the way it does. The only thing that worries me is that once the sauce gets opened and tasted the top of the bottle got "stained" and the moment the labels are open and he's talking about the aroma the bottle is clean at the top which actually makes me think it wasn't a reshoot it was the fact that beforehand the price was exposed and then covered.

There's also the fact that milk (or ice cream) could affect the tasting of the next sauce. Water is neutral.

Best thing to do is to just open your mouth and let the saliva drip out. This is especially true for oil based hot sauce as it'll coat your tongue and stay there. Milk helps but since the sauce is on the tongue, it's best to just let it drip out with the saliva. You can also use your teeth to scrape it and spit it out as well.
