@@quatha It also tastes nasty and gives people the $hits. We bought some and had one bowl and didn't even finish it. We threw the rest of the boxes away because we didn't want to subject anyone else to that experience.
So your bread recipes and instructions make baking much easier to do. I have never been a baker but loooove fresh baked breads. The bread bowls have always been a hit in our house. I, however, have always relied on Panera for them. I made a batch of your bread bowls and we are hooked. I did the poolish the day prior and it makes a huge difference. I think our yeast wasn't the best so I didn't get the big dog rise like yours but that's to be expected. The soup and bowls were an absolute hit. Perfect fort the change in weather. Thanks Bri.
I made this soup and the bread bowls tonight for my family for dinner. I can’t believe how good the bread turned out. It’s like the best bread ever. I didn’t have the aluminum pan for steam so I just spritzed water in the oven every few minutes during the “steam” part. Worked great. Soup was delicious too. Thanks Bri!
Recently, my wife and I have decided that the 4th Sunday of every month we get together with my family and have “Bri-guy” Sunday. We make one of your recipes for dinner and my parents think I’m a real cool boy. Thanks Bri.
This rocks, i have most of these ingredients already, and a 3 day weekend coming up. My wife is gonna LOOOOOOOOVE this. Started my poolish before the video was over haha. Literally cannot get enough of your videos! Really love the diversity to put into these! Your tips are so helpful and educational! You're channel is very under rated, you are just gonna keep blowing up with great recipes like this!
I made this soup and the bread bowls a few weeks ago and impressed myself with the results, very yummy! Attempting again tomorrow, hope it goes as well as the first time. Thanks for the awesome recipes!
I made this to surprise my wife with dinner after a rough day. She loved it. We are actually eating it as leftovers as we speak. I made multiple dishes of yours. Thank you, please keep it up!
Once again, a complete home run. I had a great time making both the bread bowls and the soup and my wife and I enjoyed this as a perfect winter Friday night dinner. Thank you
I recently came across your videos and I loved how simple and clean you make your recipes. I appreciate that. I just made this for my family and they LOOOOOOVED it. I didn’t make the sourdough bowl, but I made a fresh loaf of sourdough and cut slices from it. Same thing….yeh? Lol Thank you for a great recipe. I’m hooked and look forward to making more recipes.
Just watched a few of your vids, starting by the croissant one, the first that appeared on my feed. Gotta say, not only are they incredibly easy to follow but also detailed enough. I really enjoy the no-machine versions of recipes as well. They’re very helpful , especially if your only source of learning is TH-cam. Thank you so much!!
Quality as always! How refreshing it is to watch videos by someone who obviously knows his shit but isn't a Weissman about it. I used to be a chef up until the pandemic, spending all that time alone in a kitchen where nobody was buying anything was soul destroying. Your efforts are making me excited about cooking again, thank you! You're up there with Kenji for my money.
For sometime now I have used the bread recipe in this video as my go to. The only difference I make it as one large boule. Today rather than use poolish, I used bubbly sourdough discard ( same amount) and it really amped up the taste and gave that complex texture.
I bought my roommate an immersion blender for Christmas and I’m so impressed with how much easier it makes so many cooking tasks. I use it at least three or four times a week!
Really love the pun! We have an immersion blender and they are very handy. You don’t need an expensive one either! We have had a cuisanart smart stick for about 4 or 5 years.
Once again Chef Bri, you remind me why I am a born again “Strength Building Folder.” I know this video is about the soup too, but I just want you to know that once upon a time in my bread baking mania, I was so desperate to get the crumb just right, I actually contemplated using a turkey baster to inject water into the dough at different points during baking. I’m glad I found you before I did that.
This is a really good recipe for beginners (like me) to try out towards the start of your cooking career! There's not a whole lot of technique needed during the cooking process to make it come out right. It's mostly in how you prep your ingredients. Honestly, even if you cut your veggies a bit too large it's not that big of a deal. You'll still end up with a wonderful and flavorful product. :)
Hello! I've never made broccoli cheddar soup before, but was craving it so much. This was the first video that popped up in my search, and I gave it a try Wow! This soup is so, so good, and the recipe is easy for even beginners to follow along. Thank you so much for this amazing recipe! Subscribed!
I made this soup and it is AMAZING! Seriously one of the best things I have ever made. It will definitely be going into my recipe rotation. I didn't have quite as much luck with the bread bowls. I should have added a lot more flour. I only had one turn out okay-ish. It tasted good, and looked awesome. Next time though I'll probably skip the bread and just make the soup.
I was just wondering what kind of soup to make this Sunday since we'll be getting dumped on with snow. Once again, your timing and content is absolute perfection.
12:26 there's this one place I love to eat at which leave a majority of the bread still in the bowl and use a bit of a larger bread bowl to counter act the lower room for soup, tis very nice.
I made this soup tonight. It was amazing! The soup was not mushy, and because you showed us what size to cut the vegetables there was a pleasing palette of textures and flavors. I didn’t attempt the bread bowl because it’s a weeknight, but maybe next time!
Very nice video, I never thought about using the blender on just a part of the soup to get the best of both blended and non-blended soup at the same time.
I think Lorn must have amazing discipline: to live with a baker & not just curl up on the sofa with her own personal fresh sourdough loaf & softened butter. That or her reaction must be so severe that never strays.
Oooooooo yes please! My husband has a gluten intolerance (can and will eat it, but will be a soft serve ice cream machine later 🤦♀️) and I’m always on the lookout for good gluten free alternatives
Looking forward to trying this! Thanks for showing us how to make the bread (it's one of my favourite things about your videos)! The satisfaction of having made the whole dish from scratch 😁
I remember this immersion blender trick from the chicken tortilla soup video. That tip has gone into my secret weapon list. Its such a clever way to add depth with the same ingredients.
My mother always loved this when she went to Panera Bread and I've wanted to make it since I got into cooking and baking. I'm going to try this as a surprise for her soon.
I've not seen y our videos before, but I have to say, I like your no nonsense approach. No need to take 20 minutes to say what could have taken 10. So thanks. Your little breads were totally gorgeous! I love making bread!
Nice job, Brian....another one for my repertoire! Pro Tip: Just before ladling the soup into the bread bowl, place one palm on the outside of the bowl, then using four fingers of the other hand, work your way around pressing outward (from the inside) to gently compress the bread. The result? It slightly enlarges the capacity of the bread bowl - _more soup for me!_ - and the increased bread density enhances the bowl's structural integrity. (I didn't invent this move, but I did use it when serving up Brian's "30 Minute Chowder" a few days ago.)
If you want cheese to emulsify, replace table salt with citrus salt (Sodium Citrate). It's an emulsifier for cheese. It tastes the same as regular salt, it's not particularly expensive, and it's easy to find online (big online stores will have food-grade sodium citrate available).
I made this and its great, I mean really the bread is amazing and the soup is just as good. One note for those about to take this on though--its pretty much a half day commitment in the kitchen. I made it on a day off--but def not a work night meal.
I lost it at “trash ass soup” ha ha ha. Killer recipe and love the “let’s eat this thiiiiing” music today. Love love love your vidyas Brian! 5/5 dopes!!

I made this yesterday, and for my vegetarian daughter used a "chikn" broth. She declared it the best soup I have ever made! The bread bowls turned out perfect as well!
I really love your recipie videos, and this one doesn't miss the spot, but I also really like your guide videos like the one about buying salmon. I think it would be sick if you maybe did a guide on different flour varieties and how to use them or basically any subject that you know a lot about from your many experiences in the different parts of the culinary industry. No matter what you put out I will continue to watch tho!
This looked to me like Żurek at first - Polish fermented rye sour soup served in a bread :) Beatiful stuff and highly recommend googling it. Its amazing and simple you Just gotta ferment your rye flour with majoram and garlic for few weeks.
Looks fantastic! I am partial to baked potato soup in my bread bowls. Maybe it’s the Texan in me. There’s nothing like a big bowl of baked potato soup on a cold day.

That was a lot of work, but soo worth it. Had to refrigerate the dough after the 2nd rise. Still great. Thinking a little sea salt sprinkled on the dough after the water spray would be yum.

Was the bread tangy or sour like sourdough?
