How to Use Instant Pot Sauté Function

  • This video shows you how to use the Sauté function on Instant Pot IP-LUX/IP-DUO series. More details and videos are at InstantPot.com.
    Our older IP-CSG series don't have this function. The Sauté has three temperature settings, selected by the "Adjust" button.
    • Normal mode: 160~176°C or 320~349°F;
    • More mode: 175~210°C or 347~410°F;
    • Less mode: 135~150°C or 275~302°F)

    Thank you! None of the many "Beginner" videos I've watched so far, mention leaving off the lid when in sautee mode. I guess it's obvious to most people, but I'm not very bright, and I need the instruction to be as explicit as possible. I only guessed by watching a few of the longer videos that show the "sautée" step instead of just mentioning it, and I saw that they left the lid off. So I googled "instant pot" "sautee" and "lid off" and found your video. Thank you, again!

    Thank you! It’s been almost 4 years I have had this instant pot and kept thinking that my heat adjustment wasn’t working in Sautee mode. Turns out I didn’t adjust it within 10 s and now I know because you mentioned in your video and it worked. Thank you again.

      I Bought a secondhand pot that might be older it doesn’t go to the high-level does anyone know if this is true I cannot sauté because the temperature is too low in medium mode

      There are 3 settings for saute, less, normal and more. If you have an adjust button, use that to scroll through. If you don't, you push the saute button multiple times. You have to set your temp immediately after turning on saute. If you've been cooking and decide you want to change it, hit cancel, then saute to turn it back on and immediately set your temp.

    You can change the time for saute, I set mine for 4 mins and at 4 mins it will beep and turn off.

      @@gracechi4469 She is referring to the speed of the video playback, not something that has to do with the Instant Pot itself.

    Can I use the saute function to deep fry chicken? as I would on a pot with oil on the stove top?

    Wish the timer was not locked at 30 minutes. On Saute "LOW", many videos on TH-cam say this is at the temperature for 'simmer'. I wanted to simmer my chili for 2 hours but had to keep resetting the Saute 30 minute timer after it turned OFF every half hour.

    This video left out deglazing (important to avoid burn warning) but otherwise super helpful! Is there a special type of recommended spatula?

      You are correct! Deglazing is super important after sauteing in order to avoid the Burn error. We always recommend using wooden spoons in the Instant Pot for best results. Happy Cooking!

    Can I use the glass lid (sold as an accessory) when using the sauté feature? Actually, I've already done it multiple times with great success without using oil. I just use a trivet and a tiny pie pan or other oven safe dish. I just asked the question for rhetorical purposes just in case anybody else was wondering. Yes, please use the sauté feature with or without the glass lid because it's a beautiful thing to get something crispy or browned that is almost like baked in an oven with an IP! I make bread and biscuits using the sauté function, that serves me well. I just don't know the long term effects on the IP after using it for something that's essentially not in the user's manual or not used as a pressure cooker or other sanctioned purposes. I make some pretty good biscuits on the sauté function so I guess everybody else will also be just as successful. How the IP holds up over time and after many non-pressure cooking uses is anyone's guess, however. Good luck.

      In general, the use of a lid while sauteing is not recommended.

    how long is it supposed to take from "ON" to "HOT"? Mine has been on the "On" mode for Saute for about 5 min and it doesn't seem like it's heating up...

    Can you adjust the saute after it starts? It would be nice to be able to turn it town. Or do I have to turn it off and reset it?

      as he mentions in the video - hit the "adjust" button just after starting your saute.

    I have instant pot IP DUO 6 QT model . In mine for sauté function I can adjust the minutes only. How do I change it to less-normal- more mode . There is no adjust button. Seems like I can sauté in only one temp . I turn it off when I have to lower the temperature.
    Please advise how to adjust the temperature while I am sautéing.

    I have one of the LUX models, but the Saute function is very hot, even on the lowest temp. As it stands, it should be called the Burn function. However, after watching this video I think I am doing something wrong. When I choose the temperature of saute and the IP beeps and displays ON, do I need to wait until the IP displays HOT before adding anything to the pot? Or do I start adding ingredients once the IP says ON?
    Could more experienced users please advise? My IP is fully functional otherwise, and I love it deeply. It seems unlikely that the fault here is with the IP.

    I have a newer model, there is no adjust key. Saute defaults to medium which is way too hot and I cannot figure out how to get it to low. Using the plus minus only effects the minutes.

    Thanks! I have a newer model, the Instant Pot Duo. It doesn't have an 'adjust' button. When I select saute how do I then select low, medium or high?

      The newer models do not have an adjust button, you simply keep pressing the desired function to toggle through Low/ Medium/High.

    What about using oil? do I have to add liquid when I put it on pressure cook?

      You should use a small amount of oil when sauteing, same as in a pan on the stove. When it's time to pressure cook, you need to deglaze the bottom of the pot and add liquid. You always need thin liquid to pressure cook.

    The saute function on my instant pot isn't working. When I press saute, it automatically turns off after a while and doesn't display "hot". The pressure Cook, on hand, is working perfectly. What should I do?

    It was hot then I added stuff and it cool down instantly so no browning of meat

      No, sauteing in the pot is the same as on the stove top. No lid because you need to be stirring and flipping the food.

    Why does my instant pot revert to "on" when I add my ingredientes once the "hot" word shows up?

      Great question! It will revert back to ON, because once you add in your ingredients the temperature changes and it will take a few minutes to come back to HOT.

    I came here for the part that you skip over between 3:32 and 3:33. What am I supposed to do between the time that the display says "hot" and the time that my food is done?? I don't understand why you skipped that part! You just say "wait till it gets hot" and then show your food perfectly cooked inside. What am I missing?

      Once it says hot, you add your food and saute it.

      It's working correctly. When the "hot" message appears, that means it's up to temp and time to add your oil.

      Since you are using saute for browning, you just stop it when you are done.

      Yes, saute is meant to be used the same as you'd do on the stove with a pan, where you are constantly stirring and flipping. The lid is not meant to be used in saute mode.

      Saute is meant to be used without lid because the food is being watched and flipped, much like sauteing in a pan on the stove.

    Thats a lie. it never told me to remove the lid... I used the lid and it didn't warn me of anything... smh I have the Duo Pro and it has no ADJUST key

      Sauteing in the pot is just like using a pan on the stove, no cover. On a model without an adjust key, you just press the button multiple times to scroll through the settings.

      No, you saute in the pot the same way you'd saute in a pan on the stove. You need to be checking and flipping/stirring constantly. No lid.

    Disappointed after seeing this. Having to reach down into a deep narrow aperture to view and turn the meat, and the inside pot spinning as you try to stir looks look an absolute faff.

      It strikes me as easier to use another pan for browning meat, particularly large cuts.
