I used this method tonight but I had some beautiful Argentinian pink shrimp around so I made it with those instead. It was as good as any restaurant risotto I've ever had.
I remember that when we were kids, our father used to take my brother and me around Emilia Romagna woods to collect mushrooms, especially "porcini"...And I found it pretty boring and stressful at the time, but I liked eating them, so nothing comes easily and effortless. I just want to add that dry porcini brown hydrating water gives a lot more flavor, but I suggest to be careful because it's also rather tannic and can even ruin the dish.
Lol this is almost exactly how I made my porcini risotto lol. I used a cheap one and store bought stock in a carton. None of the risotto recipe for garlic ever. Its always butter, sauteed onion, toasted carnaroli (or arborio) and white wine. Risotto alla Milanese, Risotto Porcini, Risotto agli Agrumi
