103 year old Irma makes tagliatelle, our oldest grandmother! | Pasta Grannies

- Hats off to 103 year old Irma, still going for a daily walk and still making pasta. She is a joy to meet and inspiration for everyone. Her recipe is very simple:
1 free range egg for every 100g of flour (freshly ground), 2 slices of prosciutto, one red onion, 200ml passata, a handful of freshly grated 24 month aged Parmigiano Reggiano cheese.
And a small glass of locally made sparkling wine called pignoletto.

I was a registered nurse and worked primarily in aged care. Irma is 100% spot on. You have to keep moving. Not only the secret to better health in old age, but also to living long enough to enter old age. Walking is, by far, the best form of easily accessed exercise for this (swimming is possibly better because it uses more muscle groups, but not everyone has access to swimming). Good on you, Irma. You're an inspiration!
So right. I, too, am a retired RN and worked in aged care. The body is meant to move, and as you get older, you need to move more. Plus some interests and a garden. Loving family also helps. Go Irma! Gorgeous house BTW.
Hello David and Erica, thank you for your work - and I so agree with you. The women we film always have family and half the village/neighbourhood involved in their lives and exercise is built into their routine: walking to the shops, up the stairs (usually 3 flights). Irma is a treasure. To think that she is so engaged and active at 103 years of age. It is mind boggling. She is walking history and the pasta looks divine. May she and her family continue to be blessed. Thank you for another joyous episode!

I LOVE that she let's the pasta dry a bit before cutting. Most people add a ton of flour and cut right away. This causes a slimy, gummy exterior that's unappetizing. I'm impressed with everything that is Irma.

I’ve eaten good pasta in Italy every year for over 50 years and never had the horror you’re describing; where are these ‘Most people’ you’re referring to because none exist in Italy ?
Incidentally, to set yourself up as someone who’s in a position to state loftily that they are ‘…impressed with everything that is Irma’ - in other words an experienced Italian cuoca - comes over as patronising and arrogant.
I am truly flabbergasted by this woman! She is absolutely beautiful, with a radiant smile. How lucky the world is to have had her for 103 years. Thank you so much for continuing to find these precious women!

I felt very overwhelmed while watching this video, started crying from the pure emotions and wiped out my tears, because nobody at home would understand why i was crying while watching a video about tagliatelle. But it is actually much more than that. It is a hymn of life.

That happy proud look in her eyes in the end when everyone enjoys the meal is priceless, she has been making people happy with her her cooking longer than many empires have lasted, true treasure of a woman

What strikes me is Irma’s contented disposition and the pleasure she appears to take in simple things like feeding her chickens. It must be part of her recipe for longevity. Auguri e complimenti, Signora Irma!
My great grannie was nearly 102 when we lost her, she lived on her own until she was until she fell right before her 100th birthday and broke a hip. She stayed busy for 100 years, that's the trick to living so long.
I can’t even imagine how amazing that pasta must taste with fresh eggs and flour! Probably nothing like what we get in a box in the store. I love watching these grannies, thank you for these videos!

Freshly made pasta can beat anything you buy at the store. Try to make it someday, even if your first try is not perfect, it will still be delicious!

I´ve just wanted to write something similar... It´s interesting how some people choose to be happy about almost every single small thing (look at Irma´s face while she feeds her chickens) and some people are unhappy about everything (my grandmother for example).
Happiness comes from looking on the bright side of life and not the negatives:)

I know no Italian but a little bit of French. I believe Irma says "Allez allez" or something. So good to hear an elderly says something like that to the younger ones. Such an active grandma.
I am italian and to me Irma just said "Alè alè" which is a way to express joy or excitement, people often say that in football stadiums during choruses but it doesn't have any meaning in italian, you made me realize it probably is just "allez allez" italianized 😅
She's wonderful! Active, positive, exercises, has a little wine, makes fantastic food to feed the family. Who could ask for more?! Thanks for your wonderful video!

What an enchanting beautiful woman. And her home, her son are lovely too.
Irma reminds me of my own grandmother. Always trying to be active. And especially with home cooking meals as much as possible. She would typically go out for a morning walk to check on the neighbors, make conversation, and soon a half a dozen elderly ladies and gentlemen would be laughing up a storm as they slowly walked around the neighborhood.

She's so beautiful, and so are her son and grandson. I also love her house with it's vibrant color and all the artwork on the walls. Who's the artist? Most of all I love the kindness and sweetness in her eyes and the Emilian accent which so reminds me of my father's family, also from the Appennino Tosco-Emiliano, but in the valleys south of Parma, not Modena. Some of the best, if not the best, food in Italy in Modena, imo.
I really love this old, handmade recipes. Only natural ingredients, food made with patience and love. And it tastes so much better than everything you can buy in a supermarket. I started making pasta from scratch some time ago and I love it. Irma is fantastic.

I’m constantly reminded that it’s about the pasta not the sauce. Here you never see the noodles drenched in sauce masking the nuttiness of the wheat and the richness of the egg yolks….splendid Vicky as usual!

Incredible woman, and the sparkle of humor and mischief in her eyes! She looks beautiful and so youthful, I must follow her advice to walk everyday and stay active, it seems to be the true secret of youth!
Irma looks absolutely fabulous! She’s very lucid & so sweet! My Italian mother was 102 when she went to Heaven. She was also very clear minded & was active until the end. She loved to make & cook pasta & it was so delicious! Irma’s tagliatelle has my mouth watering & I truly appreciate her doing this video. She’s very special & lovable. Irma seems such a lovely lady & with such a kind face.
Hard to believe that @ 103 she's still out & about as well as kneading & rolling large amounts of pasta; truly an inspiration. Tagliatelle & fettuccine are two of my favourite pastas with rich saucy dishes like this. Big slippery ribbons, slathered in sauce, such a good mouth feel.
I hope that Irma gets her wish & we can get to see her again next year, if not sooner. She's a real pleasure to watch.
Off to prep for dinner now. The video has put me in the mood for pasta, so thinking maybe some tagliatelle with roasted carrots & a peppery brown butter sauce.

hi James, yes Irma has wonderful eyes .. and how interesting - as far as I know, carrots always a soffritto vegetable, never the star in a 'condimento' in Italian cooking. Do you blitz them at all to make them more sauce-like? Or let the butter shine and serve the carrots on the side? best wishes, Vicky

To think that Mrs. Irma lived through two centuries (20 and 21) and witnessed the Second World War, the construction of the Berlin Wall, and the arrival of man on the moon. It's wonderful! She arrives in the second half of the 21st century as a young centenarian lady. What a blessing.

I hope Irma is well and still cooking her tagliatelle, she looks like a lady who finds it easier to smile than frown. She’s extremely agile for her age and pasta boards aren’t the lightest thing to carry round full of homemade pasta.

I f you try making pasta with a matarelo you will come to realize how elastic the dough is and how physical it is to keep stretching the dough until it is thin enough to make into tagliatelle. Most people a quarter of Irma's age would find this very hard work. It is an amazing craft, and one that always looks effortless by these amazing women. The story of real cooking is done by woman like this. Unfortunately it is the male chefs of the world who get all the attention for their "prowess". Most male chefs wouldn't know where to begin to roll out pasta like these amazing woman do. Thank you for archiving this amazing knowledge and reminding us the importance of woman in our lives. My grandmother was a professional cook and as her grandson I learned the real meaning of making food. I am a liberated human because of her,
in that I can cook for myself and others in the most meaningful way.

GOD BLESS THAT GRANNIE! She comes from good stock. How she can walk a kilometer every day, lift that big board and make pasta from scratch is beyond me and puts me to shame at 77. It must be the lifestyle out in the hills of Italy. 103! AMAZING!

This is one of those cases where TH-cam could use a "Wow" response option. My grandma was the first in my family to reach 100. She died at 102. She had been unable to walk for some time. Irma is 103, and look at her!

The key to longevity is healthy eating, exercise and her wonderful zest for life. She is still so beautiful and youthful at 103 despite having had a difficult life. All natural foods that are grown and raised around her is the way to go…no GMOs there! I was born in Italy and immigrated at the age of eleven and still remember the taste of the food that was grown on our farm. There is absolutely nothing like it! God bless Irma!
