That little girl reminds me of how engaged I use to be when cooking with my late mother. She instilled a love of food and cooking in me that impacted me so much I became a chef and now have a restaurant. Love to see this. Gonna definitely try out this recipe. ❤❤❤❤
This lovely family comes from near Borgo Val di Taro, which is about one hour's drive west of my father's area. All are in the Italian Apennines, and this dish is also something we make, although we usually use Swiss Chard or bietola, which I prefer to Spinach. Cooking with dried porcini mushrooms is heavenly. The taste is to die for. You can also see the typical use of some milk in the sauce, the lack of garlic, the sparing use of tomato product, and how the pasta is "dressed" with the sauce, not swimming in a vat of it, all very Northern Italian style. That sauce is also delicious on layered polenta, or gnocchi, or you could do a meatless lasagna with it and alternating besciamella. I would also love to see her make gnocchi.
Certainly not the first time the great granddaughter has got involved in ravioli making, and certainly won't be the last. A natural, learning from the best 👌🏼👌🏼👌🏼

I am a huge fan of your channel. Thanks a lot for all you do. It's realy fascinating, it's a true magic. This way all these recipes keep going. One interesting thing I've noticed which is in common in Italy and Ukraine (my native country, the country I live in now) - both Italian and Ukrainian grannies had to cope with really hard times and a terrible poverty, and managed to create really exquisite recipes that worth restaurants. They had no practice with big chefs, no education, just a few ingredients and the necessity to feed a hungry family. It admires me a lot. Very strong and beautiful women, different contries, very much alike destinies

Not been many good Penny buns [Boletus edulis] yet this year so far. But I love it when there's enough to slice & dry to see me through the year. But I've had a few for the pot.
